Avocado Salsa - Guacamole Experiment, part 3 - Lori's Cookbook

I'm not a huge fan of avocado, but I know it's good for me, so when they were on sale at my local grocery store, I decided it was time to make friends and make a bunch of guacamole to figure out which one we would like best.

Here's the third recipe I tried, another raw variety, but more of a salsa fresca.

This is my entry for this week's @foodfightfriday challenge.

Avocado Salsa

Chop and stir together:

  • 6 roma tomatoes

(My food processor got a little over-ambitious...)

  • 1 medium onion, red or white
  • 1-2 hot peppers, according to taste

(I used serrano because I don't like a lot of heat.)

  • 1 clove garlic
  • the flesh of 3 avocados

(I cut them in the skin, then scooped it out.)

Stir in:

  • 3 Tablespoons olive oil
  • 3 Tablespoons lime juice
  • 1/2 cup of cilantro (I omitted it)
  • salt & pepper to taste

Serve as a dip with pork rinds and/or tortilla chips (or whatever) - or use with tacos or taco salad. I put it together with some leftover chicken, pork rinds and cheese - as below.

Results

So, which was our favorite?
The cooked one was our least favorite, but we liked them all.
The two raw versions were equally best for different reasons. I loved the creamy raw guacamole, but I also really liked the avocado salsa. But if you want guacamole and don't have a blender, I'd choose the cooked one for ease of processing. For that reason, all three are going into my cookbook.
