Dirty Mac & Cheese - Lori's Cookbook

Here is this week's entry for the @foodfightfriday challenge.

Macaroni and Cheese has been a stand-by in my family for a very long time. Getting married, my husband wanted "dirty macaroni and cheese" with onion and bacon... Here is how I make it now.

I start the process by frying up some bacon pieces. I use a slice per person, maybe a little more...
If I was using raw onion and garlic, I would add it now. (But I'm lazy, so I don't...)

When the bacon is done, I add some garlic granules and onion flakes. Turn off heat and let the bacon sit.

Bring a large pot, half full of water to boil. Pour in the pasta. Turn down slightly and cook until tender - or "al dente" (it's soft enough to chew easily.) I used 1 lb of macaroni.

Meanwhile, prepare the other ingredients.
Grate or chop up cheddar cheese - I use Tillamook because the farmers from my hometown produce for them. I can't tell you exactly how much I use, it varies. Enough to make a good sauce, anyway.

I also have out my crème fraiche and a stick of butter.

When the pasta is done, I turn down the temperature to about medium-low. I add the stick of butter (1/2 cup), a good dollop of the crème fraiche and the cheese.

Stir until melted.

When the cheese is melted into the pasta, add the bacon mixture.

Stir until the bacon is thoroughly mixed in.

Serve immediately.
