Keto Fried Seafood - Lori's Cookbook

One of the challenges on low-carb diets (and even more on the carnivore diet) is finding good options for coating food for frying. Here is one option:

This is my entry for this week's @foodfightfriday challenge.

The original version of the recipe came from: Healthy Recipes Blog, though I can't even find the recipe now. As usual, I've tweaked it to my personal needs at the time.


Preheat the oven to 450F.

First, make the breading

Stir together:

  • 2 cups of pork rind crumbs
  • 1/4 cup shredded Parmesan cheese
  • 1 teaspoon sea salt (I think I forgot)
  • 1/2 teaspoon garlic granules
  • 1/2 teaspoon paprika

(Feel free to tweak the seasonings, add pepper if you like it - I don't.)

Beat the egg

In a separate bowl, beat:

  • 1 egg

Prepare the seafood

Rinse and drain:

  • 1 lb. seafood

(Original had prawns/shrimp, but that wasn't what my freezer yielded... so, I have a medley of mussels, prawns, calamari and tiny octopus.)

I found it easiest to simply stir the seafood into the egg, coating it well.

Then, toss the seafood with the breading until it is well coated.

Spray it with olive oil before putting it on a lined baking sheet and into a 425F oven for about 10 minutes or until the seafood is cooked and the breading golden.

I served it with Nearly No Carb Keto Bread and a nice slab of beef.

The result tasted quite good, even though the breading definitely didn't work as I would have hoped. Made again, I'd probably grate the Parmesan more finely or omit it entirely (powdered Parmesan would also work, but is not really Keto or carnivore due to the anti-caking agents added.)
