Stuffed Zucchini

Hello, chefs! 😋

Summer is in full swing, we are on vacation, we took with us all the fresh vegetables from the garden (well, there is not much choice, only zucchini, and cucumbers, it's already ripe).

Already my last post was about zucchini, now I have another recipe for zucchini, stuffed.
This is such a light summer dish just right for the summer heat. It takes a bit more packing in the preparation, but it is a simple dish, prepare it effortlessly, and you also impress your wife/husband/partner 😁

What we need for 4 people:

  • 1 larger zucchini
  • 2 tomatoes (which I have already cut into small pieces)
  • half an onion
  • a slice of bread
  • salt, pepper, spices of your choice
  • olive oil

This recipe is very basic, which means that we can add many other things, such as cheese, pieces of meat, fruit, etc ...
The picture above shows a summer kitchen, so there is less space ...

So, cut one large courgette in half and lengthwise and scoop out the meat with a spoon and cut it into small pieces. We got some kind of molds that we salt, pepper, and grease with olive oil and we'll fill them later.

I peeled two tomatoes and cut them into pieces. This will be the basis for the filling mixture. Also, half an onion mix with tomatoes. Add salt and pepper as needed.

We also have a piece of bread, if it's old we grate it, if it's fresh we tear it into small pieces or cut it. We will use the bread if the filling mixture is too runny ...

Now fry the tomatoes and zucchini meat. Roast until everything is more or less melted and the onion is glazed. About 10-15 minutes. Here we can add what we remember to fit next to it. As I mentioned, I did it very simply, with just three ingredients ...

Since the mass is quite liquid, we now add bread to absorb the liquid and make it more compact and prepare the zucchini for filling.

I put the stuffed courgettes in the hot air oven we have here. I made one change at the last minute - I added grated cheese mixed with the basil to two and I added crushed tortilla chips to two to make them crispy.

And after ten minutes, when everything is lightly browned, it can be served.
