Hello, chefs! 😋

I will be cooking one simple dish, with few ingredients that anyone can quickly cook at home.
Carbonara is a classic and one of the simpler dishes with pasta. We make it with spaghetti.

This is my homemade version, says Carbonara Masters, which you can watch on YouTube or somewhere else will claim that the ingredients are strictly defined and that not all Carbonara.
Well, that may be true, but we who enjoy global culinary influences are doing our own thing. 😋

For homemade carbonara (for 4 people) we need only a few ingredients:

  • 400-500 grams of spaghetti;
  • about 100-150 grams of bacon;
  • one or two eggs;
  • 100-150 grams of ripe parmesan;
  • pepper, actually a lot of pepper;

First, boil water in one pot, add salt and when the water boils, start cooking spaghetti. Since this will take about 10 minutes, let's focus on other things.

Then the bacon. It needs to be cut into pieces. Even with bacon, the opinions of experts are at odds. Some argue that bacon in carbonara is not used but only dried beef cheeks. Others claim that only Parma prosciutto ... Well, we use dried in the Karst wind, salted and peppered pancetta.

Grate the parmesan. Parmesan is an aged cheese made from cow’s milk (Granna Padano or Parmigiano Reggiano). Here, too, cooking experts argue that only aged sheep's hard cheese - Pecorino - is used for carbonara ... I don't care, I take the one I currently have :) 😋

And now the sauce. Stir in one or two eggs, add the parmesan and mix everything together and set aside. There are also strong debates here, whether only egg yolks or also egg whites are used ...

Fry the bacon cut into pieces. We don't need oil or salt, because bacon is greasy and salty enough in itself. Let's pepper it.

Once the pasta is cooked, drain the water and pour the bacon over the hot pasta first, mix well and then add the eggs with the parmesan. And mix well again.
The carbonara is ready. 😋
