Traditional Kacchi Biryani Recipe || Instant homemade kacchi

Kacchi Biryani is one of the most popular and common dishes in Bengali culture. Traditional kacchi usually made with mutton but you can also use chicken, beef, lamb instead of mutton. In today’s blog I'm gonna share authentic kacchi biryani making process at home. Hope you like it... .

Ingredients

• Mutton
• Salt
• Potato
• Onion
• Green papaya
• Nutmeg
• Mace
• Kewra water
• Rose water
• Oil
• Ghee
• Milk
• Red chili powder
• Green chilli
• Ginger paste
• Garlic paste
• Turmeric powder
• Cumin
• Biryani masala
• Rice
• Bay leafs
• Cardamom
• Cinnamon
• Pepper

Cooking process

Take a pan and put some cooking oil. Pour here chopped onion and fry it until golden brown. Once done removed from hot oil. After that put oil one more time in the same frying pan and put here cubic potatoes with Turmeric powder and a little bit salt. Fry it until light golden brown.

First of all, you have to soak mutton in water with one teaspoon of salt for at least half an hour. Then blend all the spices well such as dry mace, nutmeg, cinnamon, cardamom and white pepper corn. Take a fresh bowl and pour yogurt, ginger garlic paste, dry onion, turmeric powder, red chilli powder, cooking oil, green papaya paste, mixture of spices and biryani masala. Don’t forget to put salt as taste. Mixed well and rest it for 4 to 5 hours with lid.

In a large pot add bay leafs, cardamom, cinnamon, pepper and a dash of cooking oil with fresh water and boil it. In the meantime prepare your rice by soaking in water then add all these into boiled water. Make it cooked at least 80% and then drained the water.

Place the marinated mutton in a large pot. Put here fried potato as a first layer, then fried onions as second layer after that put half of your boiled rice. As forth layer, put some kewra water, rose water, ghee, milk and then fifth layer of rice. On the top, put again a dash of milk with jafran , ghee and fried onion. Lid the pan tightly and rest it for 40 minutes in medium flame.
