This week started off on a slower pace than last week's busy-ness in our bnb and a rather alarming health scare.
I've enjoyed taking walks through the garden and looking at the progress of our Lettuce plants, which are one of the vegetables the marauding monkeys thankfully leave alone!
I only have the frilly lettuce, some only starting out and some already well-developed and looking very showy.
As we're in winter and today was a particularly chilly day, salad was not going to feature on the menu, so I thought of making a Lettuce wrap of sorts. I could have made a Burger lettuce wrap, a Lettuce hot dog or a Tuna Salad Lettuce wrap.
Our lovely housekeeper Sibongile Cynthia came to the rescue though by making Spicy Beans, one of her favourite lunchtime dishes, and of course she always makes enough to share with us.
Legumes and pulses are very good for lowering Cholesterol, so I will be eating more of that from now on.
I had some gorgeous Bell Peppers, not from my garden though; so some of that went into the spicy beans.
Quick & easy Spicy Beans
- 1 Onion, diced
- 1 large Tomato, diced
- 1/2 Bell Pepper, diced
- Crushed Garlic & Ginger
- Wet leaf Masala
- 1 can Baked Beans in tomato sauce
- 1 can Butter Beans in tomato sauce
- Curry leaves
- Spring Onions, diced
Sautee Onion & Pepper in a little oil
Add garlic & ginger, Tomatoes & wet leaf Masala
Add salt and beans, simmer then add curry leaves
Leave to cool a little before spooning into Lettuce arranged to form little baskets.
Top with spring onions
Saying goodbye to Cynthia, mask removed just for the photo; fortunately she travels with a gent who works close by so does not have to make use of public transport.
