Hi everyone this pics shows a typical Nigerian Yoruba dish which is called Ekuru which is mostly eaten by the western part of Nigeria which are the Yoruba tribe .This dish is made from beans and is very nutritious the beans must be fully processed and refined. Ekuru is a meal native to the yorubas in Nigeria. Ekuru has good taste and is usually served with obe ata dindin, mashed with eko or vegetable. Ekuru looks exactly like Moin Moin, but rather than blend the peppers, onion, crayfish etc with the beans, the beans are blended on its own. This is also called ofuloju and it is eaten with a spicy and delicious sauce. Ekuru (White Moi Moi). beans, pepper, big onion, palm oil, smoked fish, Maggi, Salt.

The ingredients needed to make Ekuru (White Moi Moi):

Make ready 3 cups beans
Prepare 8 pepper
Make ready 1 big onion
Make ready 1 cup palm oil
Take 1 smoked fish
Make ready 2 Maggi
Take to taste Salt

Steps to make Ekuru (White Moi Moi):

About three hours before cooking the moi moi, soak and peel the beans, put the peeled beans in a bowl and pour enough water to cover it. Leave to soak for three hours. This is so that the best consistency will be achieved when you blend the beans.
Blend the beans and pour into a big enough bowl slowly add water and stir the mixture at the same time till you get a good mix, Set some water in a pot to boil.
When the water boils, scoop the Moi Moi mix into your container of choice and gently place in the pot of boiling water,When done, cover the wraps with some leaves or a plastic bag to keep the heat in.Cover the pot and start cooking on medium heat.Check it from time to time and add small quantities of water at a time when necessary.
Confirm that it is done by putting a knife through it, if the knife comes out slightly stain, then it's done.
For the sauce, grate pepper, onions and tomatoes. Heat up oil and fry mixture until well fried, add smoked fish, Maggi and salt to taste. Allow to simmer for a minute and turn off heat.
Serve warm with sauce. Thank you.
