Filipino Chicken Adobo

In contrast to Spanish and Mexican adobos, which are spicier or infused with oregano, Philippine adobo has a distinctive salty, sour, and often sweet flavor.

Chicken Adobo is a Philippines meal created from the sauce with vinegar, soy sauce, garlic and black pepper, bragging the chicken legs (thighs, drumsticks). It's slightly sweet, spicy, salty, garlicy. The chicken is slowly cooked in the sauce to make it soft, aromatic.

Pinoy Recipe: Chicken Adobo

Ingredients:
½ kilogram of chicken leg (drumstick choice cuts)
3 pcs dried bay leaves
4 tbsp soy sauce
4 tbsp vinegar
3 cloves garlic, minced
1 medium sized onion, sliced
1 thumb sized ginger, thinly sliced
1 pc Red chili (Siling Haba) seeded thinly sliced
1/3 cup water
3 tbsp cooking oil/vegetable oil
1 tsp peppercorns
Salt and pepper, to taste
Green onions or Scallions for garnish (optional)

Procedure:

  1. Heat the oil in a large wok and sauté the onion, garlic, ginger, and chicken for 8 to 10 minutes.
  2. Cook for another 2 minutes after adding the pepper, peppercorns, bay leaf, and Siling haba (Red Chili).
  3. Add the vinegar, water, and soy sauce to a boil.
  4. Simmer for 5 minutes, then season with salt to taste.
  5. Continue to check the chicken until it is cooked.
  6. Garnish with green onions and serve immediately with rice.
