Sopa de Pollo para el Ratón - Chicken Soup for the Mouse

photoGridMaker_20211003_151520596.jpg

Chicken soup for the mouse has become a tradition in Venezuela and is that in any part of the country we prepare it after a night of drinks. It is common to wake up on the weekend with a "tremendous mouse" that is nothing more than a hangover or discomfort of the body after drinking alcohol or staying up late. And since in Venezuela we are quite partiers, this time I had to prepare this soup to regain energy and strength.

  • Pollo
  • Yuca
  • Auyama
  • Batata
  • Papa
  • Zanahoria
  • Mazorca de maíz
  • Ahí
  • Cilantro
  • Cebolla
  • Ajo
  • Caldo de pollo (sobre o cubito)

This soup is nothing more than a vegetable and chicken broth, there is no single way to prepare it or a unique recipe, because each family adds or discards some ingredients but basically we are going to need: + Chicken + Yucca + Auyama + Sweet potato + Pope + Carrot + Corn on the cob + There + Coriander + Onion + Garlic + Chicken broth (envelope or cube)

The vegetables for soup or sancocho are almost always found together, in the town where I live we can find 3 kilos of assorted vegetables for soup for $ 1, as seen in the photo. What we do is peel everything and wash them very well, the cuts must not be exact, it is almost to cut everything into pieces.

In a large pot we will place water and salt, the onion in quarters, the peppers, the crushed garlic and a part of the coriander. We will leave everything aromatizing the water for a few minutes.

We will place the vegetables in parts, first the yucca, sweet potato, carrot, potatoes, and squash. When it is boiling we add the cob and chicken.

After boiling for a while we add some noodles, chicken broth, or even cornmeal muffins.

And about 10 minutes later we can remove it from the heat. Remember to check that the vegetables are soft and the chicken is cooked. At that time I like to add a little coriander on top and let it rest covered.

I love serving in clay dishes, it is the most traditional thing in my family and my home. We always serve with roasted arepas or casabe, this is a dish that adults and children like and the truth is, it fell from the sky to recover 🤭
