A Witch in the Kitchen: My Beloved Grandmother Pancha's Llanero Cheese Cake - #CustardContest [EN] // Una Bruja en la Cocina: La Torta de Queso Llanero de mi Amada Abuela Pancha" [ES]

A few days ago my dear @brittandjosie called my attention about a contest organized by @zo3d, I immediately went to see what it was about, I must say that I always forget the contests so if I don't do it right away believe me I will forget it (things that some mothers keep quiet), Easter desserts! Hummm thinking about it made my mouth water hahaha, the truth is that in my family we have several favorites of the time, so it was difficult for me to make a decision, and I'm sure I will make some of these, but I can not compete with something that I have already shown, that's not very funny to say.



At home we love cheesecakes, and we always remember one that my beloved Grandma Pancha prepared, which is a simple cheesecake, it has no flour and if I'm honest it does not have much science, but what I assure you is that it is extremely delicious by the contrast of sweet and salty flavors, It is a cheese cake that I am sure you will not find in any country other than Venezuela, although thanks to the great migration of Venezuelans it is likely that somewhere there is someone preparing it, or better yet, selling the llanero cheese that we use for the elaboration, which is something even better. My father loves this cake as much as he loved my grandmother, and she, knowing it was his favorite, would make it for him whenever she had the chance.



It really is very simple to prepare, I will not say that it is economical, because it is not, but the truth is that it is worth every penny, because it is delicious. If you like the idea of this delicious llanero cheese cake, join me and I'll show you how to prepare it.

Ingredients

  • 8 Eggs (whites separated from yolks).
  • 2 1/2 Cup sugar (1 for the caramel).
  • 1 tsp vanilla.
  • Zest of one lemon.
  • 500 gr of grated cheese (llanero cheese).









Preparation

  • Preparation time: 10 Minutes.
  • Cooking time: 40 Minutes.


We will begin by preparing the caramel for the molds, for this in a small pot add a cup of sugar and water to cover it, let it cook over medium high heat until it begins to brown, we must be very careful not to over color, because the burnt caramel will leave a bitter taste not pleasant. Once our caramel is ready, pour it into the molds previously buttered and floured, I used two molds, one of 20 centimeters and one of 18 centimeters.



On the other hand, while the caramel in the mold cools, place the egg whites in a bowl and beat until stiff, add the egg yolks one at a time without stopping beating until all of them are integrated, once all the yolks are added, add the zest of a lemon.




We continue adding the vanilla and the rest of the sugar, this we will do it in the form of rain and without stopping beating. Finally, we add the cheese in three parts and with a paddle we integrate it in enveloping movements until it is fully integrated.




Ready our mixture we pour it into the molds and take it to a preheated oven at 180 ° C for about 40 minutes or until a wooden toothpick inserted comes out clean.




Let cool to unmold and enjoy, the contrast of sweet and salty, the lemon zest and the texture of the cheese is really something out of this world. Something we must take into account is that you have to use a cheese with a low level of salt for the best experience. We can add paprika honey or panela and my goodness what a delicious thing.

Hace unos días mi querida @brittandjosie llamo mi atención sobre un concurso organizado por @zo3d, de inmediato fui a ver de qué iba el mismo, pues debo decir que siempre se me olvidan los concursos así que si no lo hago al momento créanme que lo olvidare (cosas que callamos algunas madres), ¡Postres de Pascuas! Hummm de pensarlo se me hizo agua la boca jajaja, la verdad es que en mi familia tenemos varios favoritos de la época, así que fue difícil para mi tomar una decisión, y es que estoy segura que hare algunos de estos, pero no puedo concursar con algo que ya les haya mostrado, eso no tiene mucha gracia que digamos.



En casa amamos las tortas de queso, y siempre recordamos una que mi amada Abuela Pancha preparaba, que es una sencilla torta de queso, no lleva harina y si les soy sincera tampoco tiene mucha ciencia, pero lo que si les aseguro es que es en extremo deliciosa por el contraste de sabores dulces y salados, es una torta de queso que estoy segura no encontraran en otro país que no sea Venezuela, aunque gracias a la gran migración de Venezolanos es probable que en algún lado haya alguien preparándola, o mejor aún, vendiendo el queso llanero que utilizamos para la elaboración, lo cual es algo aún mejor. Mi padre ama tanto esta torta como amaba a mi abuela, y ella al saber que era su favorita se la preparaba siempre que tenía oportunidad.



Realmente es muy sencilla de elaborar, no diré que es económica, pues no lo es, pero la verdad es que vale cada centavo, pues es deliciosa. Si te gusta la idea de esta deliciosa torta de queso llanero, acompáñame y te mostrare como la prepare.

Ingredientes

  • 8 Huevos (separadas claras de yemas).
  • 2 1/2 Taza de azúcar (1 para el caramelo).
  • 1 Cdta de vainilla.
  • Ralladura de un limón.
  • 500 gr de queso rallado (queso llanero).






Preparación

  • Tiempo de preparación: 10 Minutos.
  • Tiempo de cocción: 40 Minutos.


Comenzaremos preparando el caramelo para los moldes, para ello en una olla pequeña agregamos una taza de azúcar y agua hasta cubrirla, dejamos cocinar a fuego medio alto hasta que comience a dorar, hay que estar muy pendientes de que no se pase de color, pues el caramelo quemado nos dejara un sabor amargo nada agradable. Una vez listo nuestro caramelo, lo volcamos en los moldes previamente enmantecados y enharinados, yo use dos moldes uno de 20 centímetros y uno de 18 centímetros.



Por otro lado, mientras el caramelo del molde se enfría, colocamos en un tazón las claras de huevo, y batimos a punto de nieve, agregamos en este punto las yemas de una en una sin dejar de batir hasta integrarlas todas, una vez agregadas todas las yemas, agregamos la rayadura de un limón.



Continuamos agregando la vainilla y el resto del azúcar, esto lo haremos en forma de lluvia y sin dejar de batir. Por último, agregamos el queso en tres partes y con una paleta lo integramos en movimientos envolventes hasta integrarlo en su totalidad.



Lista nuestra mezcla la volcamos en los moldes y llevamos a un horno pre calentado a 180 °C por unos 40 minutos o hasta que al introducir un palillo de madera este salga limpio.



Dejamos enfriar para desmoldar y disfrutar, el contraste de dulces y salados, la ralladura de limón y la textura del queso es realmente algo de otro mundo. Algo que debemos tomar en cuenta es que se tiene que utilizar un queso con bajo nivel de sal para que la experiencia sea la mejor. Le podemos agregar miel de papelón o panela y Dios mío que cosa más deliciosa.
