CYPRUS SUJUKOS

On this Friday, I will introduce you to one of the delicacies of Cyprus.

It is called Sujukos.

I decided to go to the grocery store to take pictures of the sujukos.
As you can see, there are several types of it and that's not all.

But the cost is the same:

Sujukos is made from grape juice.
Grapes in Cyprus are plentiful, however grapes in Cyprus are not cheap, to my surprise.

The price of grapes, regardless of the season, ranges from 1.50 euros to 5 euros per kilogram. And the expensive price does not always justify the taste of the grapes, unfortunately. It often happens when cheaper grapes are much tastier than expensive ones!

So, during the wine-making season, the resulting grape juice is poured into a large vat.
For sweetness, add a little honey, if needed.
To thicken the grape juice, add starch and cook until the juice becomes sticky.

Then almonds or walnuts are strung on long threads.
And they dip these threads into the resulting grape mixture several times so that the almonds or walnuts strung on them are well soaked and covered with a thick layer.

Then these threads are hung out in the sun so that they dry out.

When these "sausages" dry up, they are cut into pieces of the desired length.
Sujukos can be stored for many months when stored in a cool and dry place.
