Yes I and my flatmate usually make it with Quorn, not sure if you have heard of it before, but it tastes- well not so much the flavour, but the texture it almost identical to mince meat and it makes incredible bolognaise sauce and it's based on myco protein- mushrooms essentially...

Now that I have seen you make the pasta sheets, I might have a go myself one day!
