### **¡Hola a todos en esta bonita comunidad!** Hola mis queridos amigos, feliz fin de semana para todos esos amantes a la comida y los que disfrutan ver recetas preparadas con amor en esta hermosa comunidad. La receta que verán a continuación ha sido todo un desafío para mí. Desde que hago tortas he hecho esta unas 3 veces, y les seré sincero, el hecho de voltearla y lograr desmoldar es algo que no había logrado hasta ahora. Pero en toda esta curva de aprendizaje que llevo en el mundo de la cocina, puedo decir que esto es un logro para mí. Esta torta es una de las preferidas en casa, sin embargo siempre solíamos comerla directo del molde porque no lograba desmoldar con éxito. Aquí te presento la manera que a mi me funcionó, espero les sea de gran ayuda. 😊 **

The recipe that you will see below has been a challenge for me. Since I have made cakes I have made this about 3 times, and I will be honest, the fact of turning it over and unmolding is something that I had not achieved until now. But in all this learning curve that I have in the world of cooking, I can say that this is an achievement for me. This cake is one of the favorites at home, however we always used to eat it straight from the mold because it could not unmold successfully. Here I present the way it worked for me, I hope it will be of great help to you. 😊

- Comencé quitando la concha a la piña, la corté en rodajas y reservé. De la piña solo usé la mitad para esta receta, de la cual 1/4 parte la usé para sacar el zumo y el restante para colocar al molde.

- I started by removing the shell from the pineapple, cut it into slices and reserved. I only used half of the pineapple for this recipe, of which 1/4 part I used to extract the juice and the rest to place in the mold.

Luego procedí a realizar el caramelo, para el cual: - Agregué 100g de azúcar y 50ml de agua a un cazo y lo lleve a fuego bajo, removiendo de vez en cuando, hasta que se formara poco a poco el caramelo. - El molde que usé para la torta lo enmantequillé, y procedí a verter el caramelo aun caliente y en estado liquido, esparciéndolo por todo el fondo para que quedara lo más cubierto posible. - Dejé enfriar para que se solidificara. La mantequilla la usé para que al momento de desmoldar se haga con más facilidad y se evita que se pegue la torta al molde.

The butter I used so that when unmolding it is done more easily and prevents the cake from sticking to the mold.

- Licué la parte de la piña destinada para el zumo, agregué solo un poco de agua para que se licuara con más facilidad y obtuve los 150ml de jugo de piña concentrado.

- I blended the part of the pineapple destined for the juice, I added just a little water to make it liquefy more easily and I obtained the 150ml of concentrated pineapple juice.

#### **Para la torta:** - Comencé separando las claras de las yemas. Reservé las claras. - Añadí en un bol las yemas, el zumo de piña, 100g de azúcar, vainilla y mezclé.

#### **For the cake:** - I started by separating the whites from the yolks. I reserved the clear ones. - Add the egg yolks, pineapple juice, 100g of sugar, vanilla and mix.

- Tamicé la harina de trigo junto a la sal, añadiéndolas a la mezcla de las yemas. Integré bien los ingredientes hasta formar una mezcla espesa y homogénea.

- I sifted the wheat flour with the salt, adding them to the yolk mixture. I integrated the ingredients well to form a thick and homogeneous mixture.

- En un envase aparte se baten las claras a punto de nieve, le agrego los 100g de azúcar restante y sigo batiendo hasta disolverla.

- In a separate container, beat the whites until stiff, I add the remaining 100g of sugar and continue beating until it dissolves.

- Agregué las claras a la mezcla anterior integrando con una paleta con movimientos envolventes.

- I added the whites to the previous mix integrating with a palette with enveloping movements.

- La piña que destiné para el molde la coloqué sobre el molde con el caramelo ya frío y sólido. - Colocando una rodaja entera en el centro, y trozos al rededor cubriendo hasta los bordes.

- The pineapple that I destined for the mold I placed on the mold with the already cold and solid caramel. - Placing a whole slice in the center, and pieces around it, covering up to the edges.

- Vertemos la mezcla en el molde. - Podemos llevar al horno en baño de maría por 30 minutos a 180grados, o solo cocinar a baño de maría como hice yo por 1 hora

- We pour the mix into the mold. - We can bake in a bain-marie for 30 minutes at 180 degrees, or just cook in a bain-marie like I did for 1 hour

- Pasada la hora, introduje un palillo, salió seco, señal de que estaba lista. 😊 - Yo le coloqué tapa para evitar que le entrara agua, la torta creció y pegó de la tapa. Por eso se ve esa textura en la parte de arriba.

- After the hour, I inserted a toothpick, it came out dry, a sign that it was ready. 😊 - I put a lid on it to prevent water from entering it, the cake grew and stuck from the lid. That's why you see that texture at the top.

- Sinceramente no sabía en que momento desmoldar, no sabia si hacerlo cuando estuviera aun caliente, tibia o fría. - Lo que hice fue, despegar con un cuchillo los bordes, y dejarla reposar por 10 minutos. - Una buena técnica es mover un poco la torta de lado a lado, si sientes que se desliza un poco dentro del molde entonces es momento de desmoldar. - Coloqué un plato encima del molde y le di media vuelta. - Unos toquecitos al molde y lo retiré. - Dejé que se terminara de enfriar antes de comenzar a repartir en casa 😊

- I honestly did not know when to unmold, I did not know whether to do it when it was still hot, warm or cold. -What I did was, take off the edges of it with a knife, and let it rest for 10 minutes. - A good technique is to move the cake a little from side to side, if you feel that it slides a little inside the mold then it is time to unmold. - I placed a plate on top of the mold and turned it around. - A few taps on the mold and I removed it. - I let it finish cooling before starting to distribute at home 😊
