Authentic Bengali food - let's have together!!

As a bengali, we may not need any special occasion to cook specious food. It is said that, Most of the food in our subcontinent comes from the Mughals.If it is true then may be bengali have remixed the recipe of Hilsa Polao from Mughals. whatever it is, we are gonna talk about quality full food that day !!

This time I have made Hilsa Polao (Elish Polao).


Without any exaggerating let's see how to make the dish....

Ingredients for cooking Fish

Hilsa fish
Sour yogurt - half a cup
Onions as needed
Green Chili paste - 4 tbsp
Red chili paste - 1 tbsp
Garlic paste - 1 tsp
Cumin paste - 1 tsp
Salt - as needed
Sugar - half a tsp
Cooking oil - 4tbsp

Ingredients for cooking Polao

Fragrant polao rice
Black pepper - 8/10
Cloves - 4/5
Cinnamon - about 4 inches
Small cardamom - 3/4
Bay leaf - 2
Sliced onion - half a cup
Ginger paste - 1 tsp
Garlic paste - 1 tsp
Salt - to taste
Green chili - 5/6
Cooking oil - 4/5 tbsp


First, you have to cook Hilsha fish. Before cooking, marinate it for 10-15 minutes.
For marination, put all the pieces of fish, put Sour yogurt, Onion, Green Chili paste, Red chili paste,Garlic paste, Cumin paste, Salt, Sugar. Mixed it well and rest for few minutes


For cooking, Take a pan then put all marinated fish into it. Add a dash of milk and leave it for cooking. After 10 minutes, It'll be ready as your requirement.

To make Polao, Take another pan into stove. Put some oil into it then add black pepper, cloves, cinnamon, small cardamom, bay leaf, ginger paste, garlic paste and salt to taste. Make it fry for few minutes.


After that put washed rice into it, mixed it well and cook for 2 minutes.


Then add a dash of water to need and rest it for 10 minutes. In the meantime your rice will 80% cooked then add fish with gravy which is prepared before. Mixed it well on soft hand and rest it for 5 minutes.


Ta daaaaaaa look.... Your dish is absolutely ready to serve. Serve it with extra fried crispy onion.
