Ingredients:
100ml coconut milk
1/2 cup wheat flour
1/2 cup cornstarch
3 tablespoons vegetable oil
2 bananas
1 tablespoon baking powder
Preparation
For the coconut milk:
-Let's extract the pulp from 4 coconuts.
-Put in the blender with half a cup of mineral water.
-Blend until the coconut is well crushed.
-We pass through a strainer and reserve the thick part to make some dessert (I combine it with babanas to make coconut ice cream and babana is delicious) cover the coconut milk and refrigerate until ready to use.
For the cupcakes:
-Mix the flour and cornstarch.
-Mash the bananas with a fork and add the coconut milk.
-We put the vegetable oil, the oil I used is an oil that is made from the small coconuts that do not manage to grow. In Cuba this is called palmiche oil, it has many properties and its consumption is very healthy, besides it does not affect the palm crops.
-Mix the ingredients very well and place in molds. Bake for 6 minutes in an electric oven.
