Butternut squash soup.

Hello friends,

I had this huge butternut squash sitting on my kitchen counter for a week or two. I bought it to make soup but kept delaying it because of the amount of work it takes.

Finally, last Friday I had enough energy to get one third of the squash peeled and ready.

I didn’t want to cook whole thing because I wasn’t sure if people in my family would like it and keep eating the leftovers.

Well, I guess I should have cooked whole thing because they liked it. Today I’m finishing the last part of raw squash.

So I cut this squash in half.

Get the seeds out using spoon.

Peel it with knife.

Cut prepared squash into pieces, so it cooks faster.

Put in the pot and poor water to barely cover it and start boiling. When it boils I out the burner down, on the lowest and keep simmering it for about 20-30 minutes until it’s soft enough but not too much.

Then I blend it with hand blender. Have to be real careful because it’s hot.

Here is the result. Add salt and pepper to taste, decorate with pumpkin seeds. Enjoy!!!

My kids and husband loved it. Makes us feel the fall season in full🍁🍂🎃
