Jalebi is one of the most relished sweets in North and West India. In North, we serve them as an evening snack while in West, it is serving in the breakfast. Jalebis are very juicy and crunchy. These look tough to prepare given their shape and texture but trust me, if you try them once at home, you won’t really feel the need to go out. These can be easily prepared at home with minimal effort.
The Jalebi batter is fermented for hours before these are actually prepared. But in this recipe, there is no need to ferment the batter. These are instant jalebis and can be prepared very easily with ingredients regularly available at home.

Ingredients

7. | Ghee | For frying |
Method
Step 1: Soak the Urad Dal for 2 hours and grind it to a fine paste without adding much water. Keep aside.
Step 2: Grind the green cardamom to make a fine paste.
Step 3: Take the refined flour in a bowl. Add baking powder. Now keep adding water in small amounts to make a fine paste and keep whisking. Ensure there are no lumps in the mixture.
Step 4: Add the ground urad dal to the mixture. The final mixture should have a pouring consistency. Keep it aside for 1 hour.
Step 5: Prepare the sugar syrup in a separate pan by adding sugar, cardamom powder, 1 TBSP lemon juice, and 250 ml water. Give it a thick two dip consistency.
Step 6: Take a plastic cone bag and add the jalebi mixture to it. Heat the ghee in a pan and start pouring the mixture into it slowly in round circles. Ensure the ghee is medium hot.
Step 7: Fry until jalebis turn golden brown and crisp.
Step 8: Take the jalebis out of the ghee and dip them into the sugar syrup for about 2-3 minutes.
Step 9: Serve this crispy, crunchy and juicy jalebis as a dessert.
