Today I share with you what was my first experience making some noodles and the good results I achieved.
This time I will only make 200 grams of flour, to which I will put an egg and a little water; this is the basic recipe for the dough with which I can prepare any type of fresh pasta.
The first thing is to place the flour; it can be directly on the counter or in a bowl. As I am doing, then add the egg and begin to stir; a very important detail is that the dough should not be too wet.
It must have a texture like the one shown below so that it is easy to join and stretch it with the roller, and then pass it through the machine.
Once I manage to compact it all and I have a sheet; I start to run it through the machine. Until a suitable thickness is achieved.
In the following photo you can see how I am adding mass to the sheet that I already have, in this way I can increase its size and work faster.
When I have the sheet ready, I cut it; this time I will make it 30 centimeters to learn easily and I start making the noodles.
Finally, I must let them dry well, if we are going to cook them the same day, it will be enough to leave them alone for a while, on the other hand if we want to store them it is mandatory that they dry well to avoid mold. At the moment I have nowhere to dry them giving them the traditional double so I will put them on a clothes hanger. I say goodbye with much affection until the next publication.
