It is a low-fat and low-calorie meat, has high levels of protein and also has a high content of nutrients and vitamins, most of the fat in chicken is in the skin, so removing it reduces fat consumption. Then add the chicken, a little turmeric powder and leave it for 10 minutes, then add the carrot, the potato and keep stirring until the vegetables are soft and let it cook well.
Finally add the eggplant, add a little salt, mix and leave for a few minutes. finally add the cilantro.
