Hive Creative Contest: Crispy Doritos Roasted Chicken

This is a family favorite in our house, it’s a shortcut to making fried chicken, not the real deal, but the chicken is still loaded with flavor and the crispy shell the Doritos make, make it a close second!

As I do need to feed the kids some greens now and then, I made some delicious veggies as well!

Ingredients for the crispy chicken:
Chicken pieces
2 Packs of Sweet Chili Doritos
Peri-peri seasoning
Portuguese Chicken seasoning
Olive oil

Ingredients for the sides:
Brussels sprouts
Salted butter
Diced bacon
Diced garlic
Baby potatoes with parsley

Instructions:

Preheat the oven to 180 degrees Celsius (medium to high heat).

Crush one pack of Doritos in a large cooking dish. This is easy to do by opening one corner of the pack and then rolling a pin or a glass to crush the chips.

Cover the chicken pieces in olive oil, season with the peri-peri and Portuguese spice.

Roll the chicken in the crushed Doritos until fully covered. Use the extra pack of Doritos to crush over the chicken.

Cover with tin foil and place in the pre-heated oven for 1 hour.

While the chicken is roasting in the oven, I started on the sides.
Combine butter, brussels sprouts, bacon and garlic in a hot pan.

Sautee until the brussels sprouts are soft and the outsides have caramelized, forming a crispy, decadently buttered shell. Add salt and pepper to taste.

I love steaming baby potatoes in the microwave. It is quick and easy to do. Cut a corner of the bag, be sure to add parsley, butter and salt to taste.

Put it in the microwave for 10-15 minutes. Serve with extra salted butter on top.

After an hour, uncover the chicken, turn the chicken pieces and put it back in the oven, until most of the moisture has evaporated and the chicken has crisped up.

Plate up, add salt and pepper to taste.
