Friday Cooking Contest - Baskets of green plantain, stuffed with chicken + avocado sauce

Delicious green plantain baskets, filled with a delicious sauce that accompanies the chicken.

Good evening dear Hivers, this time I bring you a basic and simple recipe, an easy to prepare snack, this snack is due to my participation in the @indiaunited contest, the "Friday Cooking Contest", so I prepared my salty snack for it, with easy to get ingredients and the preparation time is short, so come and see the process.

First we need 2 green plantains, we will wash them and remove the peel, then we will cut them into pieces of the same size, for this we will measure with the first piece we cut the rest, this step is not so necessary, but each piece should have the same approximate size so that the baskets look the same.

We are going to crush 3 cloves of garlic, with this we are going to season the pieces of plantain and also add salt to taste. With clean hands we are going to add the garlic, and season the pieces.

When the pieces of plantain are seasoned, place a pan with abundant oil to heat over high heat for 5 minutes, when this time passes add the pieces in the pan and let them fry very well on all sides.

When they are completely browned on all sides we will make the baskets, this can be done with an orange or lemon squeezer, but since I don't have any of them, I improvised a little and used a big plastic spoon, a plastic bag and another metal spoon.

We will place a piece of plantain in the center of the spoon, with the help of a mallet we will crush the plantain, and then with the metal spoon we will shape it around our improvised mold until it has the shape of a circular basket.

Now we take our baskets back to the frying pan to fry them once more, let them brown on both sides and remove them.

For the filling we can use whatever we want, you can make a filling of shrimp, chicken, meat, ham and cheese, bacon or simply fill the basket with some sauce. I personally had a filling prepared for this, which consisted of ground chicken breast, seasoned with pieces of parsley, paprika, onion, salt and pepper.
I simply chopped the chicken into squares and fried it with a little oil, and when it was golden, I removed it from the pan.

Finally we are going to fill our baskets and finally we add the sauce of our preference, corn sauce, garlic sauce, mayonnaise or the sauce that I prepare based on avocado.
