Today I want to share the food that I loved the most. This is kind of traditional food from and very popular in West Java. That food named Oncom Leunca.

The picture above was a Oncom Leunca,as I said before that Oncom Leunca was origin from West Java, I first tried Oncom last year and I directly loved it!

This food is a product of fermentation carried out by several types of mold, similar to the processing of tempeh. The difference is that processed oncom is declared ready to be traded after the mold produces spores, while processed tempeh is traded before the mold produces spores (only in the hyphal stage).

There are two main types of oncom: red oncom and black oncom. Red oncom was degraded by the oncom mold Neurospora sitophila. or N. intermedia while black oncom was degraded by the tempeh Rhizopus oligosporus or Mucor species.

Oncom is the only human food ingredient that is processed by involving Neurospora species.

How To Make Oncom


Based on research that I read, Red oncom is generally made from tofu cake, which is soybeans that have been taken for protein in the manufacture of tofu, while black oncom is generally made from peanut cake which is sometimes mixed with cassava pulp (onggok) or cassava flour (tapioca), in order to have a better texture and more lenient. Peanut meal is dregs derived from peanuts that have been extracted for oil by a mechanical squeezing process or an extraction process. Although the two substrate materials are waste, their nutritional content is actually still high enough to be used by humans.

Oncom mold secretes amylase, lipase and protease enzymes that are active during the fermentation process and play an important role in the decomposition of starch into sugar, the breakdown of peanut cell wall materials, the breakdown of fats, as well as the formation of small amounts of alcohol and various esters that give rise to a pleasant and fragrant aroma. Protein is also degraded but not completely and results in increased digestibility.

To make oncom from peanut meal, it is first soaked in clean water for 3-4 hours, then drained, sifted, and then mixed with tapioca flour. Next, this mixture is steamed. After cooking, the dough is spread out on a bamboo mat, and sprinkled with yeast after it cools down. Incubation is carried out after being covered with clean banana leaves in a warm room temperature (25-30 °C[3] ) and high humidity, for 2 to 3 days.

The oncom that I shared above is raw Oncom which is it can't be eaten. You have to process it first!

The most popular processing is dry fried like tempeh. Oncom can also be a mixture of chili sauce (called chili oncom). A popular dish that uses sambal oncom as a filling is comro ("oncom dijero"), a Pasundan specialty. Oncom is also an ingredient in laksa and other soups.

The popular processed Oncom was oncom leunca. That is the food that I loved so much. For making a Oncom Leunca was easy. I don't need many ingredients. Tt can be sauteed, grilled, fried, or make in Pepes (wrapped on Banana Leaf).

But the processed Oncom Leunca that I cooked was stir Oncom Leunca.

Previously, I've been thinking that make Oncom Leunca was hard, but actually It's just a stir fry food.

So, this time I want to share the Oncom Leunca recipes.

How to Make Oncom Leunca



Ingredients

  • 1 rod the Oncom
  • 1 Gram of Leunca, (You can add more, It's according to your taste)
  • Garlic
  • Shallot
  • Leek

How to Cook



Step 1

Crush the oncom until smooth like the picture above. You just need your hand to crush the Oncom.


Step 2




Cut the garlic, shallot, and union.

Step 3






Turn the stove with medium heat. Add the ingredients one by one like the pictures above. But before you add Oncom, you have to cook the leunca around 10 minutes until the leunca are smooth. Don't forget to add salt for the taste. Taste it!



Step 4


Mix the oncom while 15-20 minutes or more. Your Oncom Leunca ready to enjoy!
