Torta libre de gluten y láteos
Why? Why a cake without gluten or dairy? well, I have a friend, one of my best friends, and she told me that she can´t eat any bread or cake, she's sick and the doctor told her to follow a restrictive diet. The saddest part, this is the "Birthday month" in her family, so there are so many cakes around that she can't eat. I made this for here and now I want to share the recipe.
¿Por qué? ¿Por qué un pastel sin gluten ni lácteos? Bueno, tengo una amiga, una de mis mejores amigas, y me contó que no puede comer ni pan ni pastel, está enferma y el médico le dijo que siguiera una dieta restrictiva. Lo más triste, es que este es el "mes de los cumpleaños" en su familia, así que hay muchos pasteles alrededor que ella no puede comer. Hice esto para ella y ahora quiero compartir la receta.
Ingredients
-2 cups of rice
-1 1/2 cups of sugar
-4 eggs
-1/4 cup margarine or as I did 2 bananas
-1 cup beetroot juice
-2/3 cup cocoa powder
-1 lemon
-Vanilla
The rice should be soaked overnight, the water should be discarded, the rice should be rinsed and well-drained. It will be used raw.
Beet juice is made with one or two beets, blended with the cup of water and strained, you can reserve the residue for another meal. This will add moisture and color.
The margarine is dairy and gluten free, but since I was looking to make something healthy, I eliminated that fat, it can be substituted with bananas as I did, with oil and even avocado.
The cocoa powder I used I made it myself, I bought the seeds from @yetsimar's family and we roasted and ground them, that means they do not contain any additives, if you are going to make this recipe for someone who cannot eat dairy or gluten, you should make sure that the cocoa you use specifies it, as it may contain traces when processed in the same place as other products.
Ingredientes
-2 tazas de arroz
-1 1/2 tazas de azúcar
-4 huevos
-1/4 de taza de margarina o como hice yo 2 plátanos
-1 taza de zumo de remolacha
-2/3 de taza de cacao en polvo
-1 limón
-Vainilla
El arroz se debe remojar toda la noche, esa agua se bota, se enjuaga el arroz y se escurre bien. Se usará crudo.
El jugo de remolacha se hace con una o dos remolachas, se licua con la taza de agua y se cuela, puedes reservar el residuo para otra comida. Esto aportará humedad y color.
La margarina no contiene lácteos ni gluten, pero ya que buscaba hacer algo sano, eliminé esa grasa, puede sustituirse con cambures como hice, con aceite e incluso con aguacate.
El cacao en polvo que usé lo hice yo misma, las semillas las compré a la familia de @yetsimar y las tostamos y molimos, eso quiere decir que no contienen ningún añadido, si van a hacer esta receta para alguien que no puede comer lácteos ni glute, deben asegurarse de que el cacao que usen lo especifíque, ya que puede contener trazas al ser procesado en el mismo lugar que otros productos.
Place all your ingredients first, that will help you to make changes later if you want different textures or flavors. I always cook without measurements so this is the first time I can actually share a recipe with others haha.
Grate the lemon peel before squeezing it and take away any seeds.
First, put the eggs and the sugar in the blender, one minute, always at the highest speed.
Then add lemon juice and grated peel, vanilla, salt, and banana, blend another minute.
Add the cocoa powder but mix a little with a spoon so the powder doesn´t fly around when you start to blend. Add the beet juice, blend until mixed.
Coloca todos tus ingredientes primero, eso te ayudará a hacer cambios después si quieres diferentes texturas o sabores. Siempre cocino sin medidas, así que esta es la primera vez que puedo compartir una receta con otros jaja.
Ralla la piel del limón antes de exprimirlo y quítale las semillas.
Primero, pon los huevos y el azúcar en la batidora, un minuto, siempre a la velocidad más alta.
Luego añade el zumo de limón y la ralladura, la vainilla, la sal y el plátano, bate otro minuto.
Añade el cacao en polvo, pero mézclalo un poco con una cuchara para que el polvo no vuele cuando empieces a batir. Añadir el zumo de remolacha, batir hasta que se mezcle.
Finally, the rice, all of it, blend for at least five minutes, the more the better. Straining the mixture is optional but I highly suggest you do so.
Grease the mold, about 25cm in diameter with this recipe, use cornflour to flour it and keep it gluten-free. Pour all the mixture, it will look quite liquid but remember that it is rice, it needs a lot of moisture to cook it.
Bake it in the oven at 180° for about 40 minutes, but, as I don't have gas, I did it on an electric stove in a bain-marie inside a pressure cooker for an hour.
Por último, el arroz, todo él, se mezcla durante al menos cinco minutos, cuanto más mejor. Colar la mezcla es opcional pero te aconsejo que lo hagas.
Engrasa el molde, de unos 25cm de diametro con esta receta, usa harina de maíz para enharinar y mantenerlo sin gluten. Vacía toda la mezcla, lucirá bastante líquida pero recuerda que es arroz, se necesita bastante humedad para cocerlo.
Se lleva al horno a 180° por unos 40 minutos, pero, como no tengo gas, lo hice en una cocina eléctrica a baño de maría en una quesillera dentro de una olla de presión por una hora.
The texture in the oven is more spongy, in a bain-marie it is like a bread cake. The taste, very very good, I made many people try it, the next day it tastes much better.
To make it even fluffier you can add a tablespoon of baking powder.
Para hacerlo aún más esponjoso pueden añadir una cucharada de polvo de hornear.
