Rice ball sweet soup

This dish is my whole intense childhood, every time I cook this dish, I often tell my husband about my childhood.
In Vietnam, this dish is very famous, and for each person is a different story of beautiful memories when it comes to it.
I just share a little more about how to make the tea balls soft and smooth, the green bean filling is cool and absorbed, and the aroma is attractive.

1/ About the dough:
The dough I made from glutinous rice flour is available to buy, this is available at the supermarket.
When kneading dough, some people stuff it with cold water, some people sit with warm, hot water
I stuff both boiling water and cold water
And that's the secret to incredibly smooth, flexible water-drink tablets. Even if you leave it for the next day, the tea will not dry out or harden

1 pack of glutinous rice flour + 150ml of boiled water (use a spoon to sprinkle the boiling water evenly into the flour, then use chopsticks to mix the flour evenly.)
Then divide the dough into parts and add colored water to the stuffing, if you can't make colored water, you can stuff it with cold water.
After kneading the dough, place the dough in an airtight container and let it rest for 1 hour. Before making each tea ball, knead it a little more until the dough is soft.

2/ Multiply part
I make green bean paste. And the secret to smooth filling is to add 1 slice of sweet potato.
Peeled green beans, washed, soaked for 2 hours, steamed until cooked, when steaming instead of just green beans, people add exactly 1 yellow sweet potato to steam together. Everyone will be surprised by this little trick.
After steaming, put it in a blender with a little water to smooth the potatoes and beans. If you do not use a blender, you can use a pestle to pound the green beans until smooth.
Add a little sugar + salt to this filling for a richer taste
Next, put this mixture on a non-stick pan and stir until it dries and thickens
Fry the red onion until crispy, mix this crispy onion into the green bean mixture
Add a little more powdered pepper to the filling
That's where I eat like that! In other places, I see no onions and peppers. If people are used to eating without onion and pepper, they can skip it.
But actually, fried onions and pepper make the filling have a very special taste.

3/ Boil tea
_ The first time I cooked this dish, I did not boil the water in the water but put it in the sugar water.
Therefore, the tea is cloudy and does not look good.
The next time you boil the tea ball until it's just cooked, take it out and soak it in cold water. Gently wash to remove the outer layer of powder, then put it in the sugar water pot.
The sugar water is clear, golden, not cloudy at all

4/ Sugar water
_ Cook this dish with many kinds of sugar, and the love of this dish is the jaggery cake, everyone!
The taste is sweet, but the color of the sugar water is very beautiful, and the water is comparable. Extremely attractive
The sugar water of this tea is indispensable without ginger and sticky leaves
I don't use a vanilla tube, I like the smell of pandan leaves and the warm scent of ginger

Another note for everyone is to cook this dish when boiling the tea ball or when dropping the tea ball into the water, don't let the fire be too loud.
The fire is so big that it's easy for them to break their stomachs.
This dish is served with coconut milk and roasted sesame. Especially in the cold rainy season, there is nothing better than a cup of warm, fragrant tea with the smell of ginger.

As for the color, I use food coloring, dark or light depending on your preference. So you can add or subtract as you like.😊
