Zucchini Cannelloni with Chicken and Pickled Cucumber Carpaccio! Check out this newly created dish from my restaurant!!!

Today I have the pleasure to share with you one of the most famous dish from our menu!

Since the day my chef and I created this dish...everyone who comes to have diner at our restaurant is always ordering it...

It is quite a complicated plated dish but looks very simple when you look at it...

And yes...it also takes a lot of time and patience to do it nicely! That's why it is preferred that the guests order it in advance!

ZUCCHINI CANNELLONI WITH CHICKEN

The main reason why when we create a new dish and make a very refined plating is for the others working with us get to know the level that we want in our restaurant!

For this one, we actually wanted to stay on the green color of the zucchini that is used and put in maximum of green veggies and herbs on the plate!

Here's a little bit of the ingredients you will need if you wish to reproduce this dish!

  • Zucchini / Cucumber / Chicken / Carrot
  • Parsley / Garlic / Onion / Mint
  • Olive Oil / Coriander / Salt / Pepper
  • Mayonnaise / Ketchup

I will put in a lot of photos in this post for you to get an idea of how many little tasks are needed to make this beautiful plate!

We started by boiling the chicken and cut in small pieces.

Then cut the different garnishes that will go in the chicken mixture.

We mixed all of the above ingredients in a bowl and added mayonnaise and ketchup. Checked the seasoning and put in couple of spoons of virgin olive oil.

Keep aside in the chiller.

Next step is to finely slice the cucumber and season with salt, sugar and little vinegar - Let them marinate until maximum water is released, like a pickle.

The zucchini is sliced next and blanched (cooked) in salty water until soft - that we can roll for the cannelloni!

Delicately take out the seeds from the cooked zucchini and cut them regularly.

Then start placing the zucchini on a plastic film as you can see below.

This step is quite delicate...turn over the sliced zucchini with the help of the plastic film.

Put the chicken mixture on the zucchini slices and roll like a cannelloni...

Plating...

We chose a white plate as the green color of the zucchini and cucumber will looks nicer on white!

First you have to place the pickled cucumber like a carpaccio on the plate...

Then will all precautions that you can take...place the cannelloni on top of the cucumber carpaccio...

With the bits and pieces of zucchini that was left over, I made a salsa with them...

Simply blend with garlic, onion, mint; season with salt, pepper and white balsamic vinegar.

The zucchini salsa was put on the cucumber carpaccio...and complete the plating with some fresh herbs...mint, coriander, chives!

This is how we serve our guest...and just before they start enjoying this starter...pour on some olive oil and some fresh lime juice on top!

This dish is served cold and during the forthcoming summer months...I am sure we gonna have a lot of orders for same!

A chilled Virgin Mojito on the side works amazingly well with this dish!
