Se trata nada más y nada menos que de los pasteles andinos los cuales son muy conocidos y pedidos en la región andina, son muy típicos y los favoritos de los tachirenses, los turistas o la misma gente originaria del tachira lo primero que buscan al entrar a un restaurante o kiosko son estos pasteles o ya sea la dicha "Morcilla" que también es full famosa por estos lados. Bueno mis amigos sin más que decirles los dejo con esta maravillosa receta que les prometo que quedan bien sabrosos 🥰.

¿COMO SE HACEN? • How is it done?

→ Bueno, para comenzar he de aclarar que mis papás son tachirenses, nacidos y criados allá, con el paso de los años se vinieron a vivir para la región central por motivos de trabajo y más alcance personal, tuvieron su primera casa aquí, su primer carro, y mi papá siempre ha sido muy dedicado a su trabajo por lo cual en lo que tengo uso de razón solo ha estado en dos empresas parecidas mutuamente en los 20 años de vida mía. A pesar de estar a 12 horas de su tierra natal ellos aún no pierden el distintivo acento ni su cultura obviamente, el sazón es una de las cosas que pienso que va cambiando a medida que pasa el tiempo y se va adaptando a la zona en donde uno esté y a los ingredientes que utilice, por lo general siempre tratamos de seguir la receta al hacer comidas típicas de la región andina aunque otras veces si le agregamos uno que otro ingrediente más para darle nuestro toque ¿Saben?. Bueno, para hacer está receta tan deliciosa lo primero que debemos hacer es buscar los ingredientes precisos los cuales son:
• Yuka
• Carne molida
• Arroz
• Harina de trigo
• Aceite
• Aliños de preferencia
Algunas personas también le agregan huevo cocido a la mezcla pero está vez nosotros no le agregamos. Para comenzar debemos descongelar la carne molida y pelar la yuka de manera de poner a cocinar las dos cosas simultáneamente para agilizar el proceso y claro, si tienen espacio para montar el arroz pues se cocinan las tres cosas a la vez, a la carne molida la pueden hacer como más les guste, con los aliños de su preferencia, con la salsa que mas sabrosa les salga, a su manera es decir. Al tener la carne y el arroz listo preferiblemente juntarlos de una vez para aprovechar lo caliente de ambas comidas y que se revuelvan muy bien.

Despite being 12 hours away from their homeland they still do not lose their distinctive accent or their culture obviously, the seasoning is one of the things that I think is changing as time goes by and adapts to the area where you are and the ingredients you use, usually we always try to follow the recipe when making typical meals of the Andean region although sometimes we add one or another ingredient to give it our touch. Well, to make this delicious recipe the first thing we must do is to look for the right ingredients which are:

  • Yuka
  • Ground beef
  • Rice
  • Wheat flour
  • oil
  • Seasoning of choice
    Some people also add boiled egg to the mixture but this time we do not add it. To begin we must defrost the ground beef and peel the yuka in order to cook the two things simultaneously to speed up the process and of course, if you have space to assemble the rice, you can cook the three things at the same time. You can cook the ground beef as you like, with the seasonings of your preference, with the sauce that you like the most, in your own way. When the meat and rice are ready, it is preferable to put them together at once to take advantage of the hot part of both foods and to stir them very well.

Para los que no conocen como cocinar la yuka es muy sencillo, simplemente se pela, o sea, se le quita la concha y se pone a cocinar en una olla con suficiente agua de manera que la cubra, al agua agregarle un toque de sal como de costumbre y cocinarla hasta que la yuka ablande y sea manejable, con cuidado de no dejarla pasar mucho, luego se escurre el agua. Al tener la yuka ya cocida lo siguiente a hacer es quitarles las raíces del centro y empezar a revolver como si estuvieramos haciendo un puré, si gustan echarle un toque de mantequilla a la masa pues no queda nada mal, después solo toca esperar a que enfríe la masa, y la carne con el arroz para proceder a realizar los pasteles. 😋

Para preparar los pasteles comenzamos agarrando un poquito de masa de yuka y hacemos una bolita, la cuál extendemos como si fuera una empanada, agarramos el relleno de arroz con carne y la ponemos en medio, cerramos con cuidado de que no se nos rompa la bolita y la pasamos por harina de trigo para sellarla, si gustan de que quede más crujiente la pueden pasar por otra harina que sea más gruesa o ya sea por pan rallado, al tener la bolita ya lista la dejamos reposar unos minutos en una bandeja previamente harinada para que no se nos pegue. Mientras realizamos este proceso hay que poner a calentar el aceite dónde las vamos a freír para que esté listo cuando tengamos ya varias bolitas armadas. Cuando se pongan a freír hay que estar muy pendiente ya que pueden llegar a cocinarse súper rápido y podrían quemarse, así que hay que estar viéndolas y dándole vuelta constantemente para que se cocinen para quitarles el exceso de aceite que les quede y listo, a servir y a comer 🥰.
