Today´s Menu - Faschierte Laibchen (Minced Patties )With Potato Puree and Steamed Veggies

Hope each and everyone is doing great! I am back in town and I would like to share what I cooked today. I made some patties similar to Hamburger. Here, in the Viennese dialect, we call this Faschierte Laibchen . There are various ways to make these patties...It is called Faschierte when the meat used is a combination of 50% ground pork and 50% ground beef . Others use simply Beef. You have to elaborate which you prefer if you order this in a restaurant.

This can be paired with potato puree which is a common by-dish in Austria. In today´s lunch, I added steamed vegetables that have been soaked in vegetable fond for about 1/2 hour. No salt was added since the fond had already been spiced. I added a sweet and sour chili dip and a mayonnaise portion because I love mayonnaise for my patties. Usually, I make sour cream spiced with crushed garlic and rosemary.

As for the puree, you need to choose a "mashy" variety of potato, it should be the one used for the mash potato. I give more liquid so that the Puree becomes so fluffy and lighter .

Potato Puree

500 g peeled and boiled potatoes, choose the type for mashing
1/2 cup skimmed milk, add more for a smooth consistency
90 g Butter - liquified
1 dash of nutmeg
1/2 teaspoon salt

Preparation:

Mash the potatoes. Place in a blender, add milk , the liquified butter , nutmeg and salt. Blend all ingredients until they resemble a smooth consistency. Adjust salt if necessary. Serve hot together with the steamed veggies.

"Faschierte Laibchen"

For: 4 Persons
500 g ground meat (50% pork/50% beef)
4 toast bread slices, cut into cubes
1/3 cup skimmed milk
1 teaspoon Worcester sauce
1 tablespoon soy sauce
2 cloves garlic, crushed
1 medium size onion minced
1 tablespoon Flour
salt
ground black pepper

Preparation:
1... Place the cut bread , the milk, egg, garlic, soy sauce, Worcester sauce in a blender and mix until the ingredients become coarse in consistency. Place the ground beef in a bowl, add the minced onion, the bread mixture , and flour. Combine all until they are well mixed.

2... Scoop a huge portion of the meat mixture and shape this into a ball , flattened a bit and place on a flat plate... Repeat with the rest of the meat mixture and cook for 4 minutes in a microwave oven at 800 Watt. The purpose of using the microwave is to cook the inside of the patties thoroughly. The microwave oven is optional though and the patties can be fried slowly under low heat until well done.

3... Heat a pan with enough cooking oil at medium heat, fry the patties until each side becomes golden brown in color. Transfer the patties in a bowl lined with paper towels to absorb excess fett. Arrange on a plate with the steamed veggies and serve with hot potato Puree.
