Chicken Paprika Casserole - With Easy Peasy Recipe

Hello everyone!

I have to apologize for my mistakes because I have erroneously clicked the publish button without my content write-up and images. I usually do not make drafts, I make my write-up straight in here so in some cases sh*t happen. LOL! But for now, I will try to make this recipe concise so you won´t get bored with all the blah blahs.

This is a very simple recipe, you can add all the vegetables you want according to the number of people munching this food. When I buy the chicken in whole, I would cook all the parts. It´s just me and my husband so what ever remainders we have, I would freeze them. When all the vegetables and other ingredients are prepared beforehand, you are halfway done. Without any further ado, the easy-peasy recipe is below.

Chicken Paprika Casserole

Ingredients:
1 whole chicken cut into parts
sweet Paprika powder
2 cloves garlic, crushed
1 onion , sliced
tomatoes, cut
celery stalks and leaves
carrots, cubed
bell pepper, cut
potatoes, peeled and diced
chives
zucchini, cut into bite size
salt
ground black pepper
vegetable stock or water
soy sauce for marinating
cooking oil

Preparations:

1... Wash the chicken parts and place in a container, sprinkle with salt and ground pepper and marinate with about 2 tablespoons soy sauce. Set aside for about 15 minutes.

2... In a hot pan with a bit cooking oil, fry both side of the chicken parts until golden brown in color.

3... Transfer to a container and set aside for later use.

4... In the same pan used for frying the chicken parts, add a bit more oil and fry the garlic until brown in color.

5... Then add all the cut vegetables and stir-fry until all veggies are coated with the oil and become a bit softer.

6... Add vegetable stock/water of about 4 cups or just about to cover the vegetables, add 2 tablespoons sweet paprika and mix thoroughly that the powder is evenly combined in the liquid.

7... Add the chicken parts and the celery leaves, let boil then simmer under low heat until the chicken parts become soft (about 1/2 hour). If the liquid has evaporated, add a bit more vegetable stock.

8... Add salt and pepper, adjust according to your taste. Arrange in a serving bowl and serve with either boiled rice or white bread.

Hope you´ll try this one. You can always adjust the quantity of the vegetable ingredients according to the number of servings or people dining with you. Rest of the Chicken Paprika Casserole can always be frozen.
