Linguine with Shrimp and Coconut Milk Creamy Sauce

If you are looking for creamy,delicious, lactose free spaghetti, this recipe is for you! It only takes about 30 minutes and also perfect to serve for guests. In this recipe, I use 100gr per person. You can double the amount depending on how hungry you are. You can swap the shrimp with chicken or even simply mushroom if you want to change it to vegan version of this recipe.

List of ingredients
  • 100gr Linguine
  • 2 cloves garlic, minced
  • 5 shrimps, cleaned
  • Thyme
  • Salt
  • 50 ml coconut milk
  • 2 tbsp coconut oil
  • 2 tsp corn starch
Method
  • Cook the pasta according to the instruction. Don't forget to cook it in the boiling water with salt.

  • Saute the garlic and thyme in a non-stick frying pan with 2 tbsp coconut oil. After a minute, transfer the shrimp into the frying pan.

  • Flip the shrimp and put the pasta inside the frying pan. Next, pour the coconut milk and the corn starch.

  • Add pasta water into the frying pan and keep stirring until the sauce thickens. Add some more salt.

  • Serve with sprinkles of thyme.
