¡Holaaaaaaa, mis queridísimos amigos de Foodies Bee Hive!
Nuevamente por aquí trayéndoles otra receta podría decirse tradicional de mi querido país. Entre los meses de julio y agosto comienza en Venezuela la cosecha de maíz y no hay un venezolano que no espere con ansías la llegada de estos meses. En mi caso anhelo que llegue porque me encanta todo lo que podemos hacer con esta delicioso vegetal. Hoy les mostraré como realizar los deliciosos bollos de maíz tierno. En el oriente de mi país son muy conocidos y consumidos y también les mostraré la elaboración de las famosas cachapas. Estas dos formas de preparar el maíz en mi país, acompañados de aguacate, queso, cochino frito o carne en vara, son sin duda uno de los mejores platos de comida criolla que puedes disfrutar.

INGREDIENTES:

  • 25 mazorcas de maíz tierno
  • 200 gr de azúcar
  • 2 cdas soperas de sal
  • Aceite
  • Margarina y queso blanco para acompañar

INGREDIENTS:

PROCEDIMIENTO:

  • Primeramente seleccionamos las mazorcas más grandes para sacar las hojas donde haremos los bollos.
  • Luego picamos los extremos de la mazorca, desechamos las primeras hojas secas y reservamos las más tiernas pero sin huecos ni ranuras.
  • Terminamos de pelar las mazorcas y eliminamos toda la barba hasta obtener una mazorca limpia. Así haremos con el resto de las mazorcas.
  • De las mismas hojas sacaremos varias tiras que uniremos para amarrar los bollos una vez que los hallamos armados.

PROCESS:

  • Ya terminado de pelar todo el maíz comenzamos a picar o desgranar con un cuchillo bien afilado tratando de no raspar la tusa para que no adquiera un sabor amargo.
  • Terminado de desgranar procesamos en un molino. Yo no poseo uno pero igualmente podemos procesarlo en la licuadora.
  • Una vez procesados todos los granos, agregamos la sal y el azúcar y mezclamos muy bien para condimentar toda nuestra masa. Podemos comprobar el punto de sal y azúcar. Si es de su agradado puede agregar un poco más.

  • Ahora llenamos hasta la mitad una olla con agua, agregamos una cucharada de sal y dos de azúcar y llevamos al fuego a hervir mientras armamos los bollos.
  • Para armar los bollos tomamos dos hojas de las que sacamos anteriormente y las unimos con los extremos opuestos.
  • Agregamos una taza de la mezcla y cerramos colocando una capa de hoja sobre la otra.
  • Doblamos los extremos para formar el bollo y amarramos con las tiras.
  • Cuando ya tengamos todos los bollos armados los colocamos en la olla de agua hirviendo y cocinamos por 30 minutos.
  • Transcurrido el tiempo sacamos de la olla y servimos bien caliente con margarina y queso rallado y aguacate.También podemos acompañarlos con cochino frito, carne en vara o asada o con lo que desees.

  • Con esta misma masa también podemos hacer las cachapas. Para ello calentamos un anafre, haripo o budare o como mejor lo conozcas y los engrasamos con suficiente aceite.
  • Colocamos una taza de la mezcla y esparcimos con una cuchara de adentro hacia afuera hasta darle forma redonda y conseguir el grosor que quieras. Yo las hago delgadas pero hay a quienes les gusta gruesas.
  • Cuando introduzcamos un cuchillo entre el budare y la cachapa y logre pasar sin problemas es tiempo de voltearlas y cocinamos por el otro lado.
  • Lista la cachapa por ambos lados, sacamos y servimos bien caliente con margarina y queso, también podemos acompañarlas con aguacate, cochinos frito o lo que prefieras.
