Pumpkin cake with spices

Today I want to honor this vegetable because I think she can be called the "Qeen" of all of the vegetables on earth. Pumpkins are not only curatives, but they are delicious no matter how you prepare them. They can be prepare in soups, pies, puddings, baked, in salads, filled etc.

They are rich in beta carotene, a mine of minerals like magnesium and calcium, but what I like most is that you can use the whole plant and the fruit. Use the flowers, leaves, seeds and skin. People ignore the leaves, we always use the fruit, but the leaves are rich in nutrients and with many properties for health like cancer. You can eat the leaves in soups and omelettes.

A friend of mine brought me this big pumpkin that it is going to make many meals. They grow everywhere in Venezuela because people throw the seeds in any piece of land. I like the ones with strong colors.

Ingredients:

  • 2 kilos of pumkin peeled and cut in small pieces
  • 300 grams of sugar
  • 3 eggs
  • 100 grams of butter
  • 300 grams of self raising flour
  • species: nutmeg and cinammon
  • 2 tablespoon of vanilla esence

Preparation:

  • cook the pumpkin with one cup of water
  • once cooked drain the water
  • make a puree
  • in a bowl mix the sugar and the butter together with the spices
  • add the eggs one at a time and mix well
  • add the puree and mix
  • add the flour
  • mix well
  • place the mixture in a tin covered with butter or you can use caramelized sugar too
  • cook in the oven for 40 minutes

)

Serve cold with sugar glass or fresh cream.
