Pickled Jalapeños or Xalapa (ENG) (SPA)

The xalapa or jalapeños are a mexican chillie cultivated mainly in Xalapa which is the capital of Veracruz, Mexico. It has been cultivated there since ancient times, aztec tribes cultivated and consumed them. Nowdays it is used greatly as part of texans meals. You can find them green and red, and you can eat them in pickles, pico'e gallo, stuffed jalapeños, and in some many other recipes that has become famous such as Chipotles in Mexico and Texas toothpicks

The jalapeños have nutritional and medicinal properties. They are rich in vitamins A, C ,B1, B2, B6 and contain monerals such as calcium, iron, magnesium, potassium, sodium, magnesium, and iodine. They are rich in capsaicin, which gives jalapeños the hot and burning sensation to the palate. It is said that the capsaicin is good for loosing weight, but you have to be careful because not everyone can eat them, they can produce stomach irritation.

Today I prepared jalapeños pickle to eat with barbecue to celebrate Father's Day next Sunday. You can eat this pickles with hamburgues, roasted chicken, and with a variety of sandwiches. The best way to cook them is to prepare them with other vegetables like carrots because they minimize the itchiness produced by the capsaicin.

When I prepare the jalapeños in pickles I cook first the vegetables and apart I cook the slices of jalapeños in boiling water for 5 minutes, I drain the water and I add them to the fried vegetables and cook together for 10 minutes. I do this to reduce the burning sensation of the jalapeños in the mouth. You can also eliminate the seeds and white inner parts of them. Today I prepare both recipes, but I am posting the original pickles.

Ingredients:

  • 250 grams of jalapeños
  • 1 small onion
  • 1 red pepper
  • 5 garlic cloves
  • 1 cup of vinegar
  • 2 cups of water
  • 1 carrot
  • 1 tablespoon of dried oregano
  • 1 tablespoon of sugar
  • olive oil
  • salt
  • 5 black peppers

Preparation:

  • wash the vegetables
  • cut the jalapeños in thin slices

  • cut the carrots in slices
  • fry them in olive oil

  • cut the onion and red pepper in slices
  • peel the garlic cloves and don't cut
  • add them to the carrots

  • add the sugar and a little of salt
  • add the oregano and mix
  • add the jalapeños

  • add the vinegar an the water
  • mix well
  • cook for 20 minutes

Store still hot in a sterilized jar and keep for 15 days before eating. This can last for 1 year. When I store it I add olive olive on the top before putting the lid.

La xalapa o jalapeños son un chile mexicano cultivado principalmente en Xalapa que es la capital de Veracruz, México. Allí se cultiva desde la antigüedad, las tribus aztecas la cultivaban y consumían. Hoy en día se usa mucho como parte de las comidas de los texanos. Los puedes encontrar de color verde y rojo, y puedes comerlos en encurtidos, pico'e gallo, jalapeños rellenos, y en algunas muchas otras recetas que se han hecho famosas como los chipotles en México y los palillos de dientes de Texas.

Los jalapeños tienen propiedades nutricionales y medicinales. Son ricos en vitaminas A, C, B1, B2, B6 y contienen minerales como calcio, hierro, magnesio, potasio, sodio, magnesio y yodo. Son ricos en capsaicina, que le da a los jalapeños la sensación de calor y ardor al paladar. Se dice que la capsaicina es buena para adelgazar, pero hay que tener cuidado porque no todo el mundo puede comerlos, pueden producir irritación estomacal.

Hoy preparé encurtidos jalapeños para comer con barbecue para celebrar el Día del Padre el próximo Domingo. Puedes comer estos encurtidos con hamburguesa, pollo asado y con una variedad de sándwiches. La mejor forma de cocinarlos es prepararlos con otras verduras como la zanahoria porque minimizan el picor que produce la capsaicina.

Cuando preparo los jalapeños en encurtidos cocino primero las verduras y aparte cocino las rebanadas de jalapeños en agua hirviendo por 5 minutos, escurro el agua y los agrego a las verduras fritas y cocino todo por 10 minutos. Hago esto para reducir la sensación de ardor de los jalapeños en la boca. También puede eliminar las semillas y las partes blancas internas. Hoy preparo ambas recetas, pero estoy publicando los encurtidos originales.

Ingredientes:

  • 250 gramos de jalapeños
  • 1 cebolla pequeña
  • 1 pimentón rojo
  • 5 dientes de ajo
  • 1 taza de vinagre
  • 2 tazas de agua
  • 1 zanahoria cortada en rebanadas
  • 1 cucharada de orégano seco
  • 1 cucharada de azúcar
    -- aceite de oliva
  • sal
  • 5 pimientas negras

Preparación:

  • lavar las verduras
  • cortar los jalapeños en rodajas finas

  • cortar las zanahorias en rodajas
  • freírlas en aceite de oliva

  • cortar la cebolla y el pimentón rojo en rodajas
  • pelar los dientes de ajo y no cortar
  • agregarlos a las zanahorias

  • agregar el azúcar y un poco de sal
  • agregar el orégano y mezcla
  • agregar los jalapeños

  • agregar el vinagre y el agua
  • mezclar bien
  • cocinar durante 20 minutos

Conservar aún caliente en un frasco esterilizado y conservar durante 15 días antes de comerlos. Esto puede durar 1 año. Cuando guardo, agrego aceite de oliva encima antes de poner la tapa.
