Combination of Taro Root, Turnips and Sweet Potatoes

I wanted to prepare a meal without the use of any kind of meat, and I thought that the best combination was to prepare a mix of roots such as taro root, turnips and sweet potatoes. These vegetables are delicious and they are good to saciate voracious appetite. The yellowish color in some vegetables indicate the presence of carotene.

These vegetables or roots has each one its peculiar taste and benefits for health. The taro root is mainly eaten by diabetic people because of the low contain of sugar, and it helps to combat anemia. The sweet potatoes though they feel sweet they don't increase the sugar in blood, they can be preapred roasted and just eat them with butter.

Ingredients needed:

You will need a portion of taro root say 200 grams of it, 1 tursnip and 1 sweet potato. Some grated white cheese, 1 cup of coconut milk, butter, olive oil. tomatoes, 2 green onions or cibulet, 2 chillies, 1 red pepper, cumin seed, black peppers.

Wash the roots with a brush to remove the mud and cut them in small pieces.

Cook them in water with salt at taste until they are soft. The taro will change from a white color to a violet color. Some are white like the okume, which is a variety of taro.

Divide the cooked roots in two ovenproof containers.
In one container you will place half of the roots , add 1 cup of coconut milk, ground pepper, add butter and white grated cheese on top.

Cook tomatoes, chillies, red pepper, green onion, a touch of cumin seed, ground black pepper and olive oil. Cook them until soft and add on the rest of the roots.

Place the two ovenproof dishes on a tray and place in the oven for 15 minutes. This time will add the flavor to the roots. Don't overcook because they will loose the waters.
