Easy Peasy Bruch Ham and Eggs - Wicked

Came back from a hike and my wife introduced me to the easiest ham and eggs brunch idea ever. Check it out - Easy Peasy!

Pretty simple ingredients. Sliced ham, shredded cheese, and eggs. Oh and a muffin pan.

Here are the steps - they are almost self-explanatory. Start off by placing two pieces of ham in each of the muffin holes. Make sure they overlap and provide a nice cup. Fill all the cups up.

Next, add the shredded cheese to each of the ham cups (I got in trouble as I put an egg in first 🙄). Anyhow, cheese first.

Crack an egg on top of the cheese into each of the ham cups. As I said, apparently, eggs on the cheese would be the "correct" order - honestly, I didn't see the issue of eggs first - but the boss said so (you can see my act of defiance in the lower right-hand corner, below 😋).

Lastly, spice it up. Add a pinch of salt and pepper to each. You might try a bit of Mrs Dash or other spices if you want. But as a base - Salt and pepper.

We then stuck it in the oven at 350F for about 10 minutes. Depending on your stove it might be a bit longer. Just until the eggs cook (firm up). Don't overcook it or you'll end up with hard egg yolks unless that's your thing. Up to you. I like them runny.

Once you plate them then sprinkle with a bit of dried parsley.

Oh, what's a brunch without some French toast and real Maple Syrup. Fried up some while we waited for the eggs and ham to cook. Need something to soak up those yolks.
