Lotus Root Soup / Healthy Body Boost

Lotus root soup is a very popular dish among the Chinese. We called it 'leng ngau tong' in Kantonis. I love cooking this, because it is fast and easy, tasty and nutritional. Lotus root itself already has dietary fibre plus other nutrients. Plus, it was my childhood soup - my mum always cooked soup for us daily and lotus root soup was one of them. [Argh....! I miss my parents so much. We are separated by South China Sea, now in lockdown, we can't travel. Sob sob... ]

Lotus Root Soup

Usually, the basic ingredients are lotus root (slice ot thinly), dried cuttlefish for flavour, red dates for sweetness. I also added in dried longan, dried cordyseps and dried goji berries for the extra nutrients and even extra sweetness. You can tell this soup is natural medicine to our bodies, helping tp strengthen and boost immunity.

Steps

For flavourful soup, I always use bones with chicken bones or pork bones, if boil over slow fire for three hours, you will get really tasty yummy broth. For this time, because it was going to be one-pot dish for family, I used pork ribs as well as shoulder bones and neck bones of pork for protein serving. They had bones too, giving the soup that extra broth flavour.

  1. Always pre-boil the bones or meat first to eliminate any scum, that way the soup will taste and look cleaner. After the scum emerged on surface, I would throw away the water, rinse the meat one more time and put in new water.

  2. Put all the ingredients into the pot, start with meat/bones, followed by the herbs ingredients then the lotus root. Boil for 3 hours. I was using a smart cooker this time because I had no time to watch the fire.

One-pot-dish done - - - that's all for our meal. Serve with a bowl of warm rice.....yummy! And super comforting especially on rainy days such as this week.
