Gabo Empanadas [ENG/ESP]

Yesterday I was making something that I don't always cook, but I decided to prepare it because I had the ingredients and I felt like experimenting, since I had prepared a few sweet ones. In this post I will show you how to prepare both sweet and savory empanadas, these are the Gabo Empanadas!

For the preparation of this recipe I used the same ingredients that I use, for example, to prepare bread:

-Wheat flour.
-Egg.
-Salt.
-Sugar.

Mix the flour with the egg and add water gradually until the dough does not feel dry. Add salt and sugar to taste. This dough does not contain yeast, but it should be kneaded for about 5 minutes, then let it rest before rolling it out with a rolling pin.

This type of dough must be stretched quite a bit. The first dough I stretched I cut in half and stretched it, then repeated the process with that half.

Remember that these empanadas are very thin, so again I must emphasize that the dough must be stretched very well and carefully so as not to break it.

Once the dough is completely stretched, you can use a mold to cut circles in the dough. I used a mold that I use for other types of pastries, but for these empanadas it is perfect.

For this recipe I used a typical meat stew with vegetables. I also used a couple of parcha and plantain sweets, to make a few sweet empanadas that are very tasty.

The filling should be placed in the center of each layer. Be careful not to use too much filling, as they may break if too much is used. Half a spoonful is enough for each empanada.

This should be closed in half and press the edges with the help of a fork. It is important to make three small holes in the empanadas so that steam escapes and it does not explode.

I did the same procedure with the sweet fillings. In this case the dulce de parcha:

I also prepared a few cheese fillings. You can put the grated cheese or just the cut piece, since it will melt when the empanada is cooking.

Once all our empanadas are ready, fry them in very hot oil. Be careful not to leave them too long on one side or the other, as they cook very fast and if you do not watch them, they can burn.

This is how all my empanadas turned out, there were quite a few because I would share with the family, so it was better to have more than not enough...

Here you can see how the meat-filled empanadas turn out. As you can see, the filling is just right and necessary for the size of this empanada, so be careful not to fill it too much so that it breaks, nor too little so that it is missing, you have to fill it with a fair measure...

Ayer estuve haciendo algo que no siempre cocino, pero decidí prepararlo porque tenía los ingredientes y tenía ganas de experimentar, ya que había preparado unos cuantos dulces. En esta publicación les mostraré cómo preparar empanadas tanto dulces cómo saladas. ¡Estas son las Gabo Empanadas!

Para la preparación de esta receta ocupé los mismos ingredientes que uso, por ejemplo, para preparar pan:

Se debe mezclar la harina con el huevo y agregar agua gradualmente hasta que la masa no se sienta seca. Se debe agregar sal y azucar a gusto. Esta masa no lleva levadura, pero se debe amasar durante aproximadamente 5 minutos, luego dejarla reposar antes de estirarla con un rodillo.

Este tipo de masa se debe estirar bastante. La primera masa que estiré la corté a la mitad y la estiré, luego repetí el proceso con esa mitad.

Hay que recordar que estas empanadas son muy delgadas, así que nuevamente debo hacer énfasis en que la masa se debe estirar muy bien y con cuidado de no romperla.

Una vez que la masa está completamente estirada, se puede usar algún molde para cortar círculos en la masa. Yo usé un molde que uso para otro tipo de pastelillos, pero para estas empanadas queda perfecta.

Para esta receta usé un típico guiso de carne con vegetales. También usé un par de dulces de parcha y plátano, para hacer unas cuantas empanadas dulces que quedan muy ricas.

El relleno debe colocarse en el centro de cada capa. Hay que tener cuidado de no usar demasiado relleno, ya que estas pueden romperse si se usa demasiado. Basta con media cucharada para cada empanada.

Esta debe cerrarse a la mitad y hacer presión en los bordes con ayuda de un tenedor. Es importante hacer tres agujeritos en la empanadas para que salga el vapor y esta no explote.

Hice el mismo procedimiento con los rellenos dulces. En este caso el dulce de parcha:

También preparé unos cuantos rellenos de queso. Se puede colocar el queso rallado o simplemente el trozo cortado, ya que este se derretirá cuando la empanada se esté cocinando.

Una vez listos todas nuestras empanadas, se fritan con el aceite bien caliente. Ojo, hay que tener cuidado de no dejarlas demasiado tiempo en un lado o en el otro, ya que se cocinan muy rápido y si no se vigilan, se pueden quemar.

Así quedaron todas mis empanadas, fueron bastantes porque compartiría con la familia, así que mejor que sobre a que falte...

Aquí pueden observar cómo quedan las empanadas rellenas de carne. Como ven, es el relleno justo y necesario para el tamaño de esta empanada, así que hay que cuidar de no rellenar demasiado como para que se rompa, ni poco como para que falte, hay que rellenarlas con una medida justa...
