What I cooked for my weekend to cheer up from morning till night 😋

Hello my lovely Hive family! Hope you all are enjoying weekend and staying safe amidst pandemic.

After pushing that one long week, finally the happiness & joy to see the weekend is always constant. So today I have decided to cook myself some special meals throughout the day just to spend some happy cooking time & enjoy homemade food.

Here are the ones what I have prepared for myself from Breakfast to Dinner-

BANANA PANCAKE
Who all love some fluffy soft round discs of warm pancakes 🥞with maple syrup for breakfast 😋!?

I absolutely love this super easy yummy breakie with honey and fruits to pair it up with.

Here is my version of it,You just need:
INGREDIENTS
1 cup Buttermilk
1 ripe banana mashed
1 egg
2 tbsp butter
1 1/4 cups wheat flour
1/4 cup sugar
Eno/fruit salt a pinch
Pinch of salt

🥞Mash banana and Sugar together to nice paste.
🥞Add buttermilk, Egg, Butter and mix up.
🥞Add all dry ingredients to it and let it sit for 10 mins.
🥞Add a dollop of butter on frying pan, pour small round discs and fry both sides until brownish.
🥞Enjoy with maple syrup/Choco syrup/Honey/Butter or any favourite fruits.

STEAK MEAL
Classic combination of Chicken steak, Creamy mashed potato, Butter fried vegetables and Herbed Rice, what more an exotic meal looks like!?

I was missing restaurant food way too much that I gave a thought to curate this special lunch for family and myself to have happy meal.

PREPERATION
🌽🥦🍠Butter fry choice of vegetables like carrot , corn, capsicum or any with pich of herbs/oregano and salt

CREAMY MASHED POTATOES🥔
Boil potatoes and mash it really smooth. In a pan, add butter, milk, mashed potatoes and loads of cheese and stir until it gets creamy. Add salt ans herbs based on taste

HERBED RICE🌿
Add butter in a pan and once heated, add in oregano/herb mix, pinch of salt, and finely chopped coriander leaves and saute. Add 3/4rth cooked long grain basmati rice and mix well. You go crazy with smell of butter and rice mix for sure🧈😋 .

CHICKEN STEAK
Take a bowl, add chilli flakes, pepper powder, olive oil, salt, chilly powder, soya sauce, finely cut garlic pieces, herbs/oregano and mix to form a oily paste. Mark cuts on chicken breast piece and apply this mixture all over and keep it marinated for like 1 hour.
(you can use big slab of paneer also instead of chicken)
Shallow fry in a grill pan or normal pan until juicy and steak is ready.

STEAK SAUCE
Saute finely cut onions in butter, add garlic chunks, pepper powder, chilly powder, chilly flakes, soya sauce, herbs, salt and lil water to make it liquidy. Add cornflour mixed water to make it bit thicker and sauce is ready

Arrange all component in plate and top steak with sauce while serving. Tadaa!❤️

NOODLES QUICK BHEL
Evening I was craving for Bhel(Its a quick indian chaat/snack) and grabbed some instant maggi noodles packets and prepared this for snack. Goes really well with coffee/tea as sides.

🥢Grab instant maggi noodles/any other packets and dab on it to crush it. Open and roast maggi noodles without masala until brownish.
🥢Take a bowl, add in chopped onions, tomatoes, salt, garama masala powder, tomato sauce, chaat masala, peanuts, any other chips crushed mixture/namkeen, sev and mix well. Squeeze lemon juice and throw some coriander leaves.
🥢 Add roasted maggi, Maggi masala and mix well to enjoy rains.
Tadaaaa, happy snacking😋

WHITE SAUCE MUSHROOM PASTA
Prepared this cheesiest creamy Alfredo in quick time for my dinner with Mushrooms🍄and sweetcorn🌽. Love white saucy pasta forever.

🍝Boil pasta of your choice with lil salt, oil and keep aside.
🍄🌽 Saute mushroom, corn, veggies, chicken and choice of additions in butter with salt, pepper, herbs until crunchy and set aside.
🍝 Take a pan, add butter, one spoon all purpose flour and fry till golden, add in milk and fresh cream, mix well without any lumps. Add loads of cheese depending on your cheese level😋
🍝 Add salt, pepper, herbs, chilly flakes, and sauted veggies to white sauce.
🍝Add boiled pasta and give a stir.
🍝If pasta sauce turns too thick, adjust with milk/Fresh cream.
Enjoy your Italian meal❤️

At the end of the after having joyous meals throughout the day, both my tummy & soul is super duper happy.
