A Witch in the Kitchen: "Veggies Omelets" [EN] // Una Bruja en la Cocina: "Tortillas de Vegetales" [ES]

This week I've been quite far away from the kitchen, to tell the truth, but today I woke up in a better mood, so I set out to prepare a different breakfast for my parents, delicious vegetable omelets are a great option for breakfast or dinner, and if you prefer it can be accompanied with toast, arepa, rice or as I served it, because it's a pretty complete meal to tell the truth and these were particularly delicious.



Making tortillas for me has always been a big challenge because I did not always get them right, I think that when we do not know how to cook that often happens, but over time I have been learning and I have managed to get them the way I want them and this was no exception. My father to tell the truth is not a big fan of eating eggs, however, I love these omelets as much as I love them, because they were really full of flavor and with a very good texture.



The truth is that this has nothing from the other world, what we must keep in mind is that the vegetables must be well cooked and seasoned to be a total success, I like to play with vegetables, so I do not always use the same ones, so this vegetable base can vary according to what we have at home. But join me and I'll show you how I prepare mine this time.

Ingredients

1 Medium eggplant, cut into strips
1 Medium zucchini cut into strips
2 Medium onions finely chopped
1 Medium carrots cut into julienne strips
2 Large diced tomato
1/2 Finely chopped red pepper
1/2 Finely chopped yellow bell pepper
7 Eggs
1 Tbsp Salt
1/4 Cup Red wine
1 Tbsp Soy sauce
Spices to taste Black pepper, cumin, oregano, garlic powder, hot paprika.





Preparation

Preparation time 10 Minutes
Cooking Time 30 Minutes





We will begin by preparing the vegetable stew that is the base of our tortilla, to do this in a large skillet, add a tablespoon of olive oil and sauté the chopped onions until they crystallize, then add the chopped yellow and red peppers and sauté for a couple of minutes, finally, add the chopped tomato with half a teaspoon of salt, stir for a couple of minutes.











Continue adding the zucchini and stir for another minute, followed by the carrot and eggplant cut into strips, stir for a couple more minutes until the zucchini and eggplant are wilted.











Finally, we season the vegetables, for this opportunity I added ajinomoto, ground black pepper, cumin, hot paprika, garlic powder, and dried oregano, sprinkle and stir, add the wine and soy sauce and stir to integrate well, let the alcohol evaporate and lower the heat to cover and let cook for a couple more minutes, then turn off the heat and let cool.











While our vegetable stew cools a little, we beat the eggs until they triple their volume, I use an electric mixer to make it faster, once the eggs are beaten, I add the vegetable stew carefully so as not to get all the air out of it, In the same way when we cook it, it will not be fluffy, but this makes a kind of bag with a crust of egg and vegetables in the center, we put it in a hot pan, preferably non-stick so we do not have to add too much oil, cook for 2 minutes on both sides and it is ready.











As I mentioned, beat the eggs and create a foam, makes us a kind of cake, because the egg creates a crust and the vegetables are in the center as if it were a cake, to make us thicker and more compact omelet we can add a little cream and we will be perfect. For those who can't live without eating meat, I assure you that you can eat this tortilla and season it as you would a meat stew (very similar to how I did it) and I assure you that you will not miss the meat, it is really delicious and with two of these you will surely be more than satisfied.

Esta semana he estado bastante alejada de la cocina, a decir verdad, pero hoy me desperté de mejor ánimo, así que me dispuse a prepararle un desayuno diferente a mis padres, unas deliciosas tortillas de vegetales son una opción genial bien sea para un desayuno o para una cena, y si lo prefieren puede acompañarse con pan tostado, arepa, arroz o como la serví yo, pues es una comida bastante completa a decir verdad y estas particularmente quedaron riquísimas.



Hacer tortillas para mí siempre ha sido un gran reto porque no siempre me quedaban bien, creo que cuando no sabemos cocinar eso suele pasar seguido, pero con el tiempo he ido aprendiendo y he logrado que me queden como las quiero y esta no fue la excepción. Mi padre a decir verdad no es muy fanático de comer huevos, sin embargo, amo estas tortillas como las ame yo, porque realmente quedaron cargadas de mucho sabor y con una textura muy buena.



La verdad es que esto no tiene nada del otro mundo, lo que si debemos tener en cuenta es que los vegetales deben estar bien cocidos y condimentados para que sea un éxito total, me gusta jugar con los vegetales, así que no siempre utilizo los mismos, por lo que esta base de vegetales puede variar de acuerdo a lo que tengamos en casa. Pero acompáñame y te muestro como prepare las mías esta vez.

Ingredientes

1 Berenjena mediana cortada en tiras
1 Calabacín mediano cortado en tiras
2 Cebollas medianas finamente picadas
1 Zanahoria mediana cortada en julianas
2 Tomate grande cortado en cubitos
1/2 Pimentón rojo finamente cortado
1/2 Pimentón amarillo finamente cortado
7 Huevos
1 Cda Sal
1/4 Taza Vino tinto
1 Cda Salsa de soya
Especias a gusto Pimienta negra, comino, orégano, ajo en polvo, paprika picante.





Preparación

Tiempo de preparación 10 Minutos
Tiempo de Cocción 30 Minutos





Comenzaremos preparando el guiso de vegetales que es la base de nuestra tortilla, Para ello en un sartén grande, agregamos una cucharada de aceite de oliva y salteamos las cebollas picaditas hasta cristalizar, seguidamente añadimos los pimentones amarillo y rojo picaditos y salteamos un par de minutos, por último, agregamos el tomate picadito con media cucharada de sal, revolvemos por un par de minutos.











Continuamos adicionando el calabacín y revolvemos por otro minuto más, seguido de la zanahoria y la berenjena cortada en tiritas, revolvemos por un par de minutos más hasta que se marchiten el calabacín y la berenjena.











Por último, condimentamos los vegetales, para ello en esta oportunidad le agregue ajinomoto, pimienta negra molida, comino, paprika picante, ajo en polvo, y orégano seco, espolvoreamos y revolvemos, adicionamos el vino y la salsa de soya y revolvemos para integrar bien, dejamos que el alcohol evapore y bajamos el fuego para taparlo y dejar cocinar por un par de minutos más, luego apagamos el fuego y dejamos enfriar.











Mientras se enfría un poco nuestro guiso de vegetales, batimos los huevos hasta que tripliquen su volumen, yo utilizo una batidora eléctrica para hacerlo más rápido, una vez batidos los huevos, agrego el guiso de vegetales con cuidado para no sacarle todo el aire, de igual manera cuando lo cocinamos no va a quedar esponjoso, pero esto hace que nos quede una especie de bolsa con una costra de huevo y el centro de vegetales, disponemos en una sartén caliente preferiblemente antiadherente para no tener que agregarle aceite en exceso, cocinamos por 2 minutos por ambos lados y listo.











Como les comentaba, batir los huevos y crear una espuma, hace que nos quede una especie de pastel, pues el huevo crea una costra y los vegetales quedan en el centro como si de un pastel se tratara, para que nos quede más gruesa y compacta la tortilla le podemos agregar un poco de crema de leche y nos quedara perfecta. Para los que no pueden vivir sin comer carnes, les aseguro que pueden comer esta tortilla y la condimentan como lo hicieran con un guiso de carne (muy similar a como lo hice yo) y les aseguro que no van a extrañar la carne, es realmente deliciosa y con dos de estas seguramente quedaras más que satisfecho.
