This week was my aunt's birthday, who is also one of my best friends and the godmother of my Mathias since my son was somewhat complicated thanks to the consequences of his pranks, the truth is that Mathias was very excited to go to her house on his birthday but for obvious reasons could not be, so yesterday to make up for that I prepared him a little black forest cake, but this is not a common black forest cake, this one is gluten-free because my aunt due to health complications has removed from her daily diet everything that contains gluten and TACC.



I decided to make a mixture with rice flour and corn starch, because in other opportunities that I have prepared cakes with only rice flour I have noticed that they are very dry and when they come into contact with the cold harden more than desired, so I also wanted to make a cake and not incorporate any fat to the mixture. I confess that I prepared enough for two small cakes, because as my grandmother used to say, if it is hard we leave it to soak it with coffee hahaha, however, the cake turned out to be a success, fluffy and very soft, so this means that the mixture worked. My aunt was more than satisfied, happy with her cake because she never imagined that I would make a special one for her and secondly, because of how delicious it turned out.



An important fact that we must take into account with this cake, rice absorbs much more liquid than wheat, for this reason, we must add more syrup when moistening the cake, likewise and in view that both Mathias and my aunt are under medical treatment, do not add liquor to the syrup, however, you can add it if you want to dare to prepare this recipe. Join me and I'll show you how to prepare it, oh and by the way, ignore the decoration, to me the cakes are delicious, not beautiful hahaha.

Ingredients

60 gr Rice flour
60 gr Cornstarch or cornstarch
30 gr Cocoa powder, unsweetened
5 Eggs
1 tsp Baking soda
2 Cups Whipping cream
150 gr Cherries in maraschino
1/4 Cup Chocolate drops
3/4 Cup Amber

Preparation

Preparation time 15 Minutes
Cooking Time 45 Minutes





To prepare the sponge cake, start by mixing the rice flour and cornstarch or cornstarch, with the cocoa and baking soda, set aside.











In a bowl add the egg whites and beat until stiff peaks, at this point we add the eggs one at a time without stopping beating, once all added and obtained a point letter, add the sugar in the form of rain, in the same way without stopping beating.











When we have added the sugar in its entirety, we add the dry ingredients, this we will do with the help of a sieve so that when adding it we do not take out the air to the preparation, and with the help of a spatula, we are integrating with enveloping movements, once the mixture is ready we pass it to a mold with baking paper. Bake in a preheated oven at 180° C for approximately 40 minutes, or until a toothpick comes out clean and dry.











Once we have the cake ready and cold, we proceed to prepare the filling and topping, for we use the whipping cream, I used one that already comes sweetened and for this simply add it in a bowl and beat until you get the point of whipped cream (if you use the one that does not bring sweetener, for this amount you can use about 3 tablespoons of powdered sugar), reserve half to decorate and the rest of the cream we add half of the finely chopped cherries.











Moisten the sponge cake that we have previously cut in half with the syrup and with the help of a spatula add the filling, which is the cream with the chopped cherries, add chocolate drops and cover with the other half of the cake to which we have also added syrup, decorate to taste and refrigerate at least a couple of hours before serving.











The cake is super fluffy and soft, and as I mentioned before you have to moisten it very well because there is nothing more frightening in a cake of this type than a dry cake, I can even tell you that if we do not say that this cake does not have a pinch of wheat flour or realize. This is undoubtedly one of those recipes that I would repeat many times because it was really delicious, it exceeded all my expectations.

Esta semana estuvo de cumpleaños mi tía, quien además es una de mis mejores amigas y la madrina de Mi Mathias, en vista de que mi hijo estaba algo complicado gracias a las consecuencias de sus travesuras, la verdad es que Mathias estaba muy ilusionado con ir a su casa el día de su cumpleaños pero por razones obvias no pudo ser, así que ayer para compensar eso le prepare un pequeño pastel de selva negra, pero este no es un pastel de selva negra común, este es libre de gluten, pues mi tía por complicaciones de salud le han quitado de su dieta diaria todo lo que contiene gluten y TACC.



Decidí hacer una mezcla con harina de arroz y fécula de maíz, pues en otras oportunidades que he preparado tortas con solo harina de arroz he notado que son muy secas y cuando entran en contacto con el frio se endurecen más de lo deseado, así que además quise hacer un bizcocho y no incorporar ningún tipo de materia grasa a la mezcla. Les confieso que prepare cantidad suficiente para dos bizcochos pequeños, pues como decía mi abuela, si queda duro lo dejamos para mojarlo con café jajaja, sin embargo, el bizcocho resulto siendo un éxito, esponjoso y muy suave, entonces esto quiere decir que la mezcla funciono. Mi tía quedo más que satisfecha, feliz con su pastel pues no se imaginaba en primera que le haría uno especial para ella y en segunda instancia, por lo delicioso que quedo.



Importante dato que debemos tener en cuenta con este bizcocho, el arroz absorbe mucho más líquido que el trigo, por este motivo debemos agregarle más almíbar al momento de humedecer el bizcocho, de igual manera y en vista de que tanto Mathias como mi tía están bajo tratamiento médico, no le agregue licor al almíbar, sin embargo, pueden agregarlo si desean animarse a preparar esta receta. Acompáñame y te muestro como la prepare, ah y, por cierto, hagan caso omiso de la decoración, a mí los pasteles me quedan deliciosos, no hermosos jajaja.

Ingredientes

60 gr Harina de arroz
60 gr Fécula de maíz o maicena
30 gr Cacao en polvo sin azúcar
5 Huevos
1 Cdta Bicarbonato de sodio
2 Tazas Crema para batir
150 gr Cerezas en marrasquino
1/4 Taza Gotas de chocolate
3/4 Taza Almíbar

Preparación

Tiempo de preparación 15 Minutos
Tiempo de Cocción 45 Minutos






Para la preparación del bizcocho comenzaremos mezclando la harina de arroz y la fécula de maíz o maicena, con el cacao y el bicarbonato de sodio, reservamos.











En un tazón agregamos las claras de huevo y batimos hasta el punto de nieve, en este punto vamos agregando los huevos de uno en uno sin dejar de batir, una vez añadidos todos y obtenido un punto letra, agregamos el azúcar en forma de lluvia, de igual manera sin dejar de batir.











Cuando hayamos agregado el azúcar en su totalidad, añadimos los ingredientes secos, esto lo haremos con ayuda de un tamiz, para que al agregarlo no le saquemos el aire a la preparación, y con ayuda de una espátula vamos integrando con movimientos envolventes, una vez lista la mezcla la pasamos a un molde con papel para horno. Lo Llevamos a un horno pre calentado a 180° C por aproximadamente 40 minutos, o hasta que al pinchar con un palillo este salga limpio y seco.











Una vez tengamos el bizcocho listo y frio, procedemos a preparar el relleno y cobertura, para esto empleamos la crema para batir, yo utilice una que ya viene endulzada y para ello simplemente la agregue en un tazón y batí hasta obtener el punto de la crema chantillí (si usas la que no trae edulcorante, para esta cantidad puedes usar unas 3 cucharadas de azúcar glass), reservamos la mitad para decorar y al resto de la crema le agregamos la mitad de las cerezas finamente picadas.











Humedecemos el bizcocho que previamente hemos cortado a la mitad con el almíbar y con ayuda de una espátula agregamos el relleno, que es la crema con las cerezas picaditas, agregamos gotas de chocolate y tapamos con la otra mitad del bizcocho al que también le hemos agregado almíbar, decoramos a gusto y refrigeramos al menos un par de horas antes de servir.











El bizcocho quede super esponjoso y suave, y como les mencione antes hay que humedecerlo muy bien, pues no hay nada más espantoso en un pastel de este tipo que un bizcocho seco, incluso puedo decirle que si no decimos que este bizcocho no tiene ni una pizca de harina de trigo ni se dan cuenta. Esta es sin duda una de esas recetas que repetiría muchas veces pues quedo realmente deliciosa, supero todas mis expectativas.
