What do you usually do with leftover food? In this article, I would like to talk about how my family uses the leftovers to create other dishes. In Vietnam, rice is the main dish in meals that are served with other dishes from meat, fish, eggs, and vegetables. So rice is often cooked more to ensure the stomaches of all family members are full after meals. So sometimes rice is left over after meals. In the countryside people would give it to cattle or poultry. But in the city, people often throw it in the trash. My family has another way to deal with that leftover rice. After each meal, we will put leftover rice in a box and store it in the refrigerator. When the amount of rice is enough, my wife will make the following dishes.
This is fried rice with dried shredded pork. Leftover rice will be pressed into pieces by hand, then it will be dried in the sun before being deep fried. Next is to make the sauce, which is fish sauce or soy sauce that is boiled with sugar and chili. Then drizzle the sauce over the fried rice, add some fried scallions and dried shredded pork on the top. As a result, we had another delicious meal made from leftover rice from previous meals.
Another way to use leftover rice is to dry it in the sun to separate the grains. Then deep fry it with oil and serve with dried shredded pork. It's too easy to make, isn't it? This is my family member's favorite snack.
Yesterday was Sunday, my wife also used the remaining dry corn in the kitchen cabinet to make caramel popcorn, which is also easy to make. Just put the dry corn in a large pot on the fire, cover the lid to let the corn explode. Then make caramel by boiling water and sugar until it becomes a thick brown paste, then add butter and stir well. And finally, add the popcorn and stir again. We then had delicious caramel popcorn for a weekend movie.
