Shrikhand is a must have dessert in summer in India. Traditionally it is made with animal yoghurt but with growing vegan lifestyle some other crueltyfree Shrikhand recipes are also developed.
3 years before I posted one recipe here using no any curd, It was really amazingly delicious and healthy. Here you can find that recipe.
Vegan Shrikhand (Mango Rich)
This time I prepared it with Soy Milk Curd. It was not less delicious that any traditional recipe. Here have a look at Shrikhand first before recipe..
Mango rich, creamy and delicious Soy Shrikhand
Ingredients Required
- Soy milk 1 liter (preferably fresh homemade)
- Curd starter (I used previously made curd)
- Mango pulp about 1/2 kg
- Sugar about 250 gm or as per taste.
- cardamom powder 1/2 tsp
- Dry fruits of your choice 1/2 cup
- salt a pinch

Procedure
- Set the curd using vegan curd starter.
- Once it is ready hang it in a cotton bag for 4-5 hours to remove all water containt. ( I hanged it overnight)
- In a blender jar add this hung curd, sugar and mango pulp.
- Blend well to make a smooth and thick paste like consistency mixture.
- if curd is not much sour a raw mango can be added with mango pulp,
- Transfer it into a bowl and add dry fruits and cardamom powder. Mix well.
- keep in the fridge.
