"Caldo Verde" a traditional Portuguese soup

Hello friends, how are you? I hope so.

Today I'd like to share with you a recipe I usually make, it's a traditional Portuguese soup called "Caldo Verde".

"Caldo Verde" is a soup that takes few ingredients, simple to make, fast, cheap and very tasty, being great to warm up the cold days and can be accompanied by a good wine.

My father is Portuguese and I have been to Portugal several times, so this is my favorite version of this recipe that is traditional in our family.

For the recipe (serving for 3 people) you will need only the following ingredients:

4 medium potatoes

1 Portuguese sausage (you can use calabrian sausage instead)

5 cabbage leaves

1 clove of garlic and 1 small onion

Step 1:
Cut the sausage into rounds, the onion and garlic into small cubes, and the cabbage into small strips:

Step 2:
Cook the potatoes, if you want you can peel them before cooking, however, if you don't want to, which I prefer because it is easier, you can cook the potatoes with house, but before putting them in the pot, make a small deep cut all along the side of the potato (this will help remove the peel after cooking), this way:

Step 3:
Place the potatoes in a pot, cover the potatoes with water, bring to a boil and let them cook until they are soft (the time needed will vary according to your stove), you can poke the potatoes with a fork until you feel that they are soft inside.

Step 4:
Remove the potatoes from the pan, let them cool and remove the peels, below you can see on the left the cooked potato with peel (showing how easy it is to remove the peel) and on the right the 4 potatoes already peeled.

Step 5:
Fry the onion and garlic in a pan with olive oil.

Step 6:
Mash the potatoes.
This can be done in two ways, the first is with a fork and some water (as in the picture below), you knead them until they become a cream, and then add the onion and garlic, they will be like little pieces inside the soup.
You can also put the potatoes, garlic, onion, and water in a blender and blend them to a cream.
Attention, don't put too much water in this step, just enough to beat the potatoes and turn them into a broth.

Step 7:
Put the potato, onion and garlic cream in a pot, add a little water until it becomes a good soup consistency (this consistency is up to each one's taste), below is the consistency I left mine at:

Step 8:
Place the sausage in the pot, add a little white or black pepper (to taste) and let it boil over very low heat for 15 to 20 minutes.
I usually don't add salt, because the sausage has plenty of salt, if it's unsalted at the end, when you eat it, you can add salt.

Step 9:
After the cooking time, turn off the oven, because the soup is ready. At this stage, with the heat turned off, add the cabbage cut into strips and stir to blend in the soup.

Now all you have to do is serve and eat it.

To go with it I like slices of bread and some cheese. Below is a picture of the ready and served caldo verde:
