Easy Peach Pie Recipe. & Peach Infused Vinegar

My son brought home a bag of the juiciest ripest peaches from his friends garden and being that they were so ripe I knew we wouldn’t eat them quick enough even though we are such big fans of this fruit so I knew I had to either can them or use them up quickly. Peach pie is always a hit in my home so that’s exactly what these peaches were about to be made into!
For one pie I used 10 peaches. I hate things going to waste around my home so I saved the peach skins in a mason jar which I filled up 3/4 of the way with white vinegar and the rest with water to make peach infused vinegar which is great for marinades and dressings.

This infusion is ready to be used after 2 weeks. Keep it in your pantry. It lasts indefinitely!
Now the pie is super easy to make! Have your pie crust ready according to your recipe or if store bought according to the package directions and let’s get to making the filling!
Ingredients
10 ripe peaches peeled and cut into square or slices

Preheat oven to 375 degrees
3/4 tsp vanilla extract
1 1/2 tbsp lemon juice
3 tbsp cornstarch
1/2 cup white sugar
1/2 cup brown sugar
1 tsp cinnamon
1 cup water
1 pinch kosher salt

Directions

  1. In a saucepan combine all ingredients sans the peaches and whisk over medium heat until it simmers.
  2. Add your peaches and simmer until the sauce turns a little thicker, like melted milkshake consistency.

  3. Remove from flame and roll out your pie dough into a 9 inch pie pan.

  4. With a slotted spoon scoop the peaches onto your pie pan.

  5. Top with your pie dough and crimp the edges and poke holes for the steam to escape.

  1. Bake at at 375 for 50-60 minutes. It should be a beautiful light golden brown when finished!

    Let cool at least 30 minutes on the counter and enjoy!
    I use this recipe for my apple pies as well but add a dash of nutmeg to the syrup.
    Any syrup you have left over you can use to pour hot over vanilla ice cream or to add some flavor to any hot winter cocktail!
