Easy & Refreshing Watermelon Salad

I keep reading on the possibility of La Niña hitting us hard here is So Cal. This means a very cold yet dry winter with excessive rain in the northwest. However, we are still experiencing a heatwave here in the southwestern part of California so refreshing and quick dishes are always welcomed!
I only harvested about 3 watermelons this year thanks to the squirrel problem we’ve been facing in the garden. But those 3 watermelons were used completely, nothing was wasted, not even the rind as you can see here in my pickled watermelon rind recipe I posted!
Watermelon salad is one of the easiest and refreshing lunch salads I enjoy making and eating during summer. The fruit and the mint used are super cooling! And you only need 5 ingredients!

Cube 2 cups of watermelon. Squeeze half of a lemon or line and drizzle on top. Toss in about 1/4 cup of fresh mint leaves.

Sprinkle sea salt to taste, drizzle some balsamic glaze on top and finish with 2 tablespoons of crumbled feta cheese!
