Our bipolar weather here has gone from a series of cool days to today and tomorrow being expected to be in the high 80’s!
Even after yesterdays peach pie making we still had quite a few peaches left so making something quick, filling and refreshing for brunch was perfect using these remaining peaches!
After making a quick veggie soup using the last of our harvest I served the easiest dish ever- sliced peaches with Burrata!
All you need is a good quality Burrata cheese and peaches obviously! Burrata is one of our favorite cheeses in my home, it’s a combination of mozzarella filled with delicious cream giving it a delightful texture and delicious taste!
Some people like to grill their peaches and then broil the Burrata on top. Sometimes we drizzle a little good quality balsamic vinegar to dress it with. But today being that the peaches were super ripe and fragrant serving it just as it is was the perfect way to enjoy this simple dish. A little sprinkle of Persian blue salt on top and voilà!
As in many things in life, sometimes uncomplicated things are the best.
