This week @Qurator's Hive Top Chef is fried rice, and I have not entered this challenge with everyone for a long time. I hope you all still remember me. There is a shortage of vegetables in the stores here. Every day there is only bitter melon, eggplant, cucumber, choy sum, and sometimes carrots from other countries.

There aren't any red onions or white onions that are not rotten a few weeks already. I like eggplant and bitter melon, but my family doesn’t like them, so we eat only a few different vegetables everyday. I can’t make any recipes for Top Chef because of these problems. Today I found choy sum and I have carrots at home to make a vegan fried rice recipe. I hope you enjoy it.

Ingredients For Deep-Fried Tofu

  • 250g tofu
  • 1/4 tsp salt
  • 1/4 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp coriander powder
  • 2 tbsp flour for deep-frying

Cut tofu small and add chili powder, paprika, salt, coriander powder, and flour, then mix together. Then deep-fry them.

Ingredients For Fried Rice

  • 3 cups of cold rice
  • 2 stalks of lemongrass
  • 20 wood-ear fungus
  • 1 carrot
  • 7 choy sum (use only the stalks)
  • 3 cloves garlic
  • 2 green onions
  • 1/2 tsp pepper powder
  • 1/2 tsp + 1/4 tsp salt or taste
  • 3 tbsp soy sauce
  • 1 1/2 tbsp nutritional yeast (optional)

This recipe is good for four people.

Soak wood-ear fungus in the water until soft, then wash them all good. These wood-ear are small, so I do not cut them.

Slice lemongrass, chop garlic, cut carrots, green onions, and choy sum very small.

Heat oil and fry garlic a bit, then add lemongrass and fry it two minutes or until it smells aromatic.

Then add carrots and fry a little.

Then add wood-ear fungus and fry it well. Next, add choy sum and fry a bit, then add salt, soy sauce, pepper, and nutritional yeast. Fry it together well, then add fred tofu stir-fry it all a little more.

Add rice and stir-fry it four to five minutes. Finally add green onions, it’s ready.

It was delicious with pickled cucumbers and fresh chilies.
