Before any particular preparation, I give the fruit or vegetable to see what reaction it has. Then I know if he likes it or not.
In the case of blackberries, Santiago does not like it very much, it feels acidic and it is also a nice mess.
And the jam is a fantastic presentation to go with bread, cookies and cakes. The detail of commercial jams is that they are more sugar than fruit and it is not healthy.
Sugar generally works as a thickener and preservative. Peroooo there are alternatives. As a natural thickener we have flaxseed and chia. We can also use the pectin from the passion fruit. And as preservatives the lemon that contain citric acid. The only thing is that it does not last long, so I recommend you make the right jam that you are going to consume.
Ingredients
Strawberries
Water
Flax
Lemon
Panela / stevia
Preparation
Wash the strawberries with plenty of water, remove the green stem
Cut the strawberries into small squares
Put the strawberries in a pot with a tablespoon of water
While it is heating, crush the strawberry, you will see that the juice drips.
In a glass add 2 tablespoons of flaxseed and 4 tablespoons of water and let it soak for 15 min
When you see that the flaxseed is ready add it to the pot with the strawberries. Mix well with a wooden spoon.
When the mixture thickens add the juice of half a lemon
This part is important: I sweeten it with about 20g of papelón. You can use stevia if you want or nothing. mix it homogeneously and voila
Pack in your glass jar and let it cool to consume and that's it.
