I've never prepared this dish before, looks delicious. The difference between north Indian and south Indian food is like the difference between night and day. It's a shame south Indian food has never caught on in the west, but I think it's because of one of the reasons you mentioned, most dishes are already vegetarian/vegan (without ghee).

Most North Americans alos like to have meat in every dish, and they aren't fond of spicy food, so I think that is why north Indian food is just "Indian food" in the USA. It's more mild and there are plenty of chicken dishes, perfect for the American market.
