TRADITIONAL KERALA LEMON PICKLE : plant power cooking challege #week 7

Hello plantbased chefs, special thanks to @justinparke for this amazing cooking challenge. Am not a great cook but i do love cooking and like to try new recipies especially plantbased. To be perfectly honest with you all, some of my recipes were ulter failures.

My sister is my assistant chef and also the first taster of all my reciepies. Its so much fun when the whole family is in the kitchen and preparing something together.

For this challenge i would like to share how to make traditional kerala lemon pickle. Most indians love spicy foods and pickles are our favourite side dish. Lemon pickle is a great combination with biriyani rice ,tapioca etc.

Currently am staying in my office cottage. And am making this pickel in my office kitchen(with limited resources and time).

Inorder to make this pickle first rinse 6 or 7 medium sized lemons in hot water.

While waiting for the lemons to get dried, take some garlic, ginger, onion and green chillies nd cut it in to small pieces.

After the lemons got dried, cut the lemons in to desired sizes.

Then take the pan ( in my case there was no pan available in our office kitchen so i took a steel vessel ) heat some coconut oil in it and then add some black mustard seeds.

After waiting for like 5 minutes add the ginger, garlic, chillies and onion that we have already cut in to the pan and saute it nicely for 2 minutes . You can add some curry leaves if you like.

Then add some chilli powder and turmeric power in to it. And then stir it again for 2 minutes.

Then add some water in to the natural masala we have prepared.

Then finally add the lemon pieces that we cut in to the masala and stir it for another five minutes.

Hurray....... our spicy lemon pickle is ready to be served.

After preparing this, i served this to my colleagues and they really loved it. The joy that you get after getting great comments from people who tasted your cooking is just heartwarming.
